Notes: -BIAB water retention is 0.0625 gal/lb. Start with 4.65 gal water
-Mash normally, 152F for 60-75 minutes
-Boil for 70 minutes following the hops schedule
-Slowly add the Belgian Candy Sugar with 5 min left in boil
-Ferment starting low (62F) and raise 1F each day after fermentation starts for 2-3 weeks. Seems like this will encourage clean fermentation and release of ideal flavors, plus ferment all available sugars.
-high carbonation, if kegging go to 3.5-4 vols. If bottling, go to the limit (3 vols is spec limit)
This benefits from lager-style aging, but can be consumed immediately. Age for 12-16 weeks for best results per forums.
Brewed July 2022: OG was spot on, FG went all the way down to 1.001 for nearly 12% beer. Opened one after 3 days in the fridge - prominent alcohol taste, very fruity, not as dry as I hoped. It is certainly bright, strong, bold, fruity. Should also have spice notes.

Notes: So then, from my extensive reading today:
Your most well-known DIPAs use anywhere up to 95% 2-row in their malt bills. Cloudwater, for their first ever DIPA, used 97%, 2.9% glucose and a couple of acid additions! Caramel/rolled oats/lactose for body and a sweetness to help balance out the rhubarb and hop additions.
I've scaled back the hops to let the rhubarb come through - it may be that even that is too much, but the key (again from my reading) is to add barely anything to the boil - it's all whirlpool and dry. Centennial/chinook/citra is a combo I've liked in previous Cloudwater efforts too.
So, I'm hoping this will be chewy, thick, have a real knockout hop aroma and a sweet/tart balance in the flavour. Feel free to make suggestions! |

Notes: Chipotle to be sliced lengthways up to the stalk and seeds left in tact: the aim is to expose as much of the chilli as possible. Mangos to de-skinned and then cubed, again aiming to create good exposure .
Chipotle and mangos to be sanitised in vodka for a minimum of 8 hours before the vodka is strained away and the chipotle and mango added to a sanitised muslin bag, add then to the FV. Leave for potential secondary fermentation arising from the fruit sugars for another 5 days before gravity check then racking. |

Notes: Used Pilsner malt for high diastatic power and because it is the traditional malt for the style. Special B was used to contribute color as well as raisin, caramel, and dark fruit notes described in BJCP guidelines. Additionally, the use of Belgian candi syrup will add more extract to the wort as well as wild cherry and dark fruit flavors and contribute to final color. Added dextrose to help dry out the beer a little more. Used warrior for good bittering hop, didn't use any aroma hops as hop notes are not typical of style.
Lactic acid added in the mash to lower pH to optimal range. Gypsum and calcium chloride added to balance out water profile, and Wyeast 1762 used for subtle dry fruit esters at 1.25m cells/mL. Mashed at 1.25 qt/lb which left 6.25gal for sparging, considered thicker mash but with the larger mash tun didn't feel it necessary. Fermentation should be at 65f for 3 days then allowed to rise to 72f to boost ester production. |
