Notes: Mash at 152 for 40 minutes.
60 minute boil.
Whirlpool for 20 minutes.
Chill to 66 and ferment at 66 for 3 days, then raise to 75. When beer is around 1014, add the fruit and lower the temp to 70. After 1 day raise it back to 75 and continue fermenting until gravity is stable. then crash, rack, and carbonate.
Water should be 1:1 sulfate to chloride. 75 ppm calcium, 19 ppm magnesium, 12 ppm sodium, 90 ppm sulfate, 104 ppm chloride. |

Notes: First beer I made with my wife - later brewed it for our wedding. Now an annual expectation. This recipe is an all-grain version of that original extract recipe.
For 2018 I opted to use a Mack and Jacks Clone as the base beer.
For 2021 learned that adding ~4 lbs of frozen strawberries at end of boil rapidly cooled the wort and contributed just right amount of strawberry flavor. |

Made with the yeast from a bottle of Westvleteren 12, aged with vanilla beans. Only available in 375ml bottles. Limited to 3200 bottles. The first in our Abstrakt series. To capture yeast from another bottle conditioned beer, simply make up a starter with some wort and grow the yeast up. Once it goes through a fermentation at 1 litre it can go straight into your wort to start the main fermentation.

Tim felt non-dryhopped version was too gingery, however, dry hopping seemed to offset the ginger in a good way - either cut ginger down, or dry hop entire batch.
