*Tirem una mica curt de litres, potser al final en fem menys, però ho podem ajustar amb litres d'aigua bullida, és important clavar la OriginalG 1056-1055.
*Està calculat amb una eficiència del 70% de maceració, realment a les produccions grans em estat entorn el 78%, i la tirada de 20L d'ambra també 78%, per tant també és probable que anem alts de densitats si fem bé l'aigua, per tant, també està bé anar curts de most final postboil per equilibrar densitat.
*Molt interessant saber L de preboil que tenim i la densitat, hauriem de començar ja a mesurar el % rendiment de les maceracions com a norma.
*Molta atenció a quanta aigua se'ns evapora amb l'equip, important per futures produccions.
*El llúpol en pellet es tira sense mitjó i després es fa whirpool (centrifugar) de 10' per acumular restes al fons i aproftar al màxim sabor i aroma, si veiem que la cervesa està bruta també podem utilitzar el mitjó bo per filtrar abans d'entrar al fermentador. NO POSAR EL CUL DE LA OLLA COCCIÓ AL FERMENTA; té acumulat restes de llúpol i impureses sòlides.

Notes: Brew notes 1/9/20:
Strike water was 158, initial mash temp 148-150. After about 40 mins, mash temp was down below 145. Heated with the intention of a high mash step around 162, but blew through this to mash out at 170. Luckily it looks like I still got close to 80%+ efficiency which is right where I wanted to be anyway. Ended up with 1.035-1.036 pre boil which is 86-88% efficiency which is better than I could have asked for. 30 minute whirlpool/hopstand starting at about 175.
Came out with 7.5 gallons of wort compared to expected 7. Changed the boil to 80 mins to boil off some extra water.
Final OG approx. 1.051. Pitched on top of existing yeast bed at 63deg. Fermentation chamber set to 54deg SP.
Pitch on top of yeast bed from Yamanote-sen.
Kohatu (NZ) 1oz - Was released in 2011 by the New Zealand Institute for Plant and Food Research. It is a lower Alpha variety (6-7%) that is a descendant of Hallertau Mittelfrüh, which is where Kohatu inherited its high Humulene oil content from. This high Humulene percentage (36-37% of total oil) imparts a complex woodsy and resinous character. Kohatu also has a high Myrcene content (35-36%) that gives it a very fresh aroma of tropical fruits, making it an excellent hop for single-hopped pale ales and session IPAs. |

Notes: A medium body, light coloured Pale Ale brewed for enjoying in the warm summer months on the Redcliffe Peninsula in Queensland, Australia.
Hops can be high alpha, tropical fruit variety, typically Galaxy (AUS) here in Australia. Although this particular version I'm trying out El Dorado (USA).
Our source water is rain water via municipal collection in dams. Water is relatively soft with suitable minerality for brewing; typically we need to add some CaSO4 and a little CaCl.
Carbonate to 2.4 vols and enjoy cold. |
