Aiming to make a light lager composed of two-row and flaked corn for Super Bowl Sunday.
Mash temp = 152 degrees F for 60 minutes
SG = 7.5 gallons @ 8.5 Brix = 1.0338 g/L
OG = ~ gallons @ 11.2 Brix = 1.045 g/L
FG = 5.3 Brix = 1.007 g/L after correction for EtOH on January 12, 2023.
This was my first fermentation under pressure (10 psi) using the ferzilla.
Kegged via closed transfer on 1/16/2023

General - For mash 1.5 qrt water / lb grist ratio
*SRM* - Slightly off colour. from target everything else on par to BJCP.
Mash 75 mins @ 65C
Mash out once converted starches & @76C.
Noble Hops only available at teaching brewery Tettnanger 3.2% A. acid. 135 grams.
Boil 90 mins Hops in @ start.
15 mins 2 whirfloc tablets (Irish Moss)
Whirlpool and let sit 15 mins before transfering.
Transfer to fermenter at 17-18C
Pitch Lalbrew Koln (dry yeast) 180g/hL pitching rate (*higher*)
Start ferment @17C-18C
Start to Lager after about day 4-5

Key points:
* > 50% wheat malt, rest pilsner
* Mash options:
- Decoction: 20 mins @ 55C, pull single decoction and boil for 10-15 mins, add back to mash raising to 67C for 60 mins.
- Single infusion: replace some or all pilsner with Munich and mash at 67C for 60 mins. Can adjust to somewhere in 66-68 if you want more/less body. Went light on Munich in this recipe (10%), add up to ~30% if you want it more grainy.
- If you want to add more clove flavour, add ferulic acid rest: 20 min @ 43C.
* Use German hops (Hallertau, Spalt, Tettnang, Perle, Magnum or Tradition), target ~10 IBU, add mainly @ 60 min, avoid excessive late additions.
* Don't use finings.
* Boil: 60 min probably fine. Some claim than 90 mins can reduce SMM from pilsen (only do this if you notice significant canned corn flavour in previous batches)
* Ferment with Wyeast 3068 (Weihenstephan) @ 17C until completely attenuated, pitch one pack per 20L. Target 200B cells (~0.75 M / ml / P). |

Notes: Boil rate with Christian's burner was exactly 1 gallon/hr.
Started with 9 gal. in strike water. Added 5 campden tablets to remove chlorine. Brought up to 162ish. Added barley and temp. dropped. Had lots of trouble getting it back up to right temperature (fluctuating), I think i spiked it at 170ish? Not sure.
Waited 80 minutes. At the end of 80 mins., I pulled the barley and 8 gals remained. Boiled with lid open for 60 minutes. Worried falling leaves from mimosa tree may have fallen into the boil, but didn't see any during the boil. Accidentally added 1oz hops at 60 (was supposed to add ½oz at 60 and the other half at 30). When boil was finished, I still had 6.5 gals. Took FOREVER to cool to 80. At 80 or maybe a little under (1:30 am), i drained to fermenter and tried to keep out junk and ended up with 4. I kept adding more from the bottom of the boil, and the quality was nasty looking, but brought it up to about 4 ¾. and took a sample at 1.046. I added 2 bottles of cold water to bring it up to 5 gal. I added the yeast and stored. |
