90 minute boil for DMS reduction, due to high % of Pilsner malt
add first wort hops as boil kettle starts filling
1 tbsp fermcap just before boil
in last 15 min of boil, add:
dextrose
18 g whirlfloc - mix up in 1 L of water
15 g Yeastx-82 nutrient - mix up in 1 L of water
whirlpool 10 mins with hops, let rest 10 mins before knocking out.
Add 02 through carb stone at low flow rate (3 L/min) for 120 sec.
Pitch container of Omega OYL-056 Belgian Golden Strong Ale Yeast at 65F. Increase temp set point by 3F each day until at 83F on day 7
Note get the first 3bbl batch to 62F and then pitch yeast. Knock out the 2nd 3 bbl batch at 68 to try to achieve starting temp for the full 6 bbl batch of 65F.
Note: dry hop amounts are for full 6bbl double batch, but hot side hops are for each 3 bbl batch. |

Notes: Bru'n Water profile - Yellow Balanced
1.020 starter using Omega Yeast's Lacto Blend kept at 85°F in a water bath with an immersion circulator for 2 days.
Day 1 - Boil for 45 minutes with no hops and chill to 90°F then pre-acidify using lactic acid to 4.3 pH and pitch lacto starter. Sanitize temp control and put in wort with a heat wrap to keep temp at 85°F
Day 2 - In 12 hours, my pH went from 4.3 to 3.5. Verify pH with meter and then bring the wort back up to a boil to kill lacto and then add hops and spices at listed times.
Version 1: added salt in fermentor when packaging. Salt level was appropriate to my palate but will decrease from 10g to 8g to see how it changes. Will consider adding salt near flame out for convenience and to further reduce oxygen pickup. |
