Apocalyptic Sour adjusted to a smoothie sour.
This recipe can be adjusted for just about any puree for different fruit flavors.
Heat water to strike temperature and add grains. Steep for 60 minutes @ 152.
After 60 minutes, remove the grain bag and let it drain or set it in a bucket with a strainer and add the resulting liquid to the kettle.
Raise temperature to 170 gradually and hold for 10 minutes or so.
Bring wort to a boil, add lactose and hops, and boil for 30 minutes.
Ferment as normal. After active fermenation is complete, add 10 pounds of desired fruit* to FV.
*If you're using fresh fruit, prepare fruit my smashing and pasteurizing @ 170F for 10 minutes. This step is unnecessary if you're using puree or frozen fruit*
Sample beer every few days to check fruit flavor. Keg once desired flavor has been reached.

Notes: Used two packs of US-05 and fermented in keg. Fermentation never showed itself through the blowoff tube, so I threw a pack of US-04 in a week after brew day. Still no signs of fermentation. The cause of this was later determined to be a leak at the keg's lid.
Cold crashed in keg for five days, dumped yeast, then transferred to serving keg to carb for a week.
This first batch was very orangey, and the coriander seed didn't come through as much as I'd have thought. The extra yeast pitched didn't really seem to have an impact on flavor. All-around, a very tasty brew to have around in the fall. |

Notes: Add 6.5 gallons mash water at about 164 degrees, let cool to around 155 and cap tun for about 75 min. Sparge with 3.5 gallons at 168 degrees
This was in the primary for two weeks (could/should have done just one).
Added 2 oz of pure vanilla extract and one cup of American Oak Chips - Dark Toast at transfer to secondary.
Taste at kegging time and add more vanilla if need be (I added 1oz or so at this time).
325ml of Makers Mark at kegging time.
Changes I'd Make Next Time:
Turn it down to 1 lb Chocolate.
More Oak Chips, More Bourbon. Soak 2 cups of American Oak Chips - Dark Toast in 500ml of Makers Mark (Start this on brew day, add to secondary. |
