Notes: First... I don't understand why the formula gives these specific gravities... my OG lands at 1.067/68 and FG at 1.008/06.
The Rolled Oats consist of toasted Quaker Oatmeal(laid out in toaster oven until heavily toasted).
Grains are put into bag in a 5 gallon water cooler, covered with about 2.5 gallons of water at 149 degrees. After 30 minutes check water... add and stir enough 185 degree water to bring temp up to 148 for about 30 to 40 minutes. Total mash time of appx 1 hour. Sparge with 185-190 degree water to make about 3.5 gallon wort.
For me this wort has a SG of 1.022 at 60 degrees.
Add DME. After hot break start adding hops.
Boil 1 hour...Add brown sugar and honey during last 15 minutes of boil.
To cool, I set my 30 quart aluminum brewpot into an ice bath. I use a large plastic tote with 4, 10 lb bags of ice and water. With regular stirring of the wort, this usually cools it from around 190 down to 80 degrees within 40 minutes.
I keep 2 gallons of water in the freezer for about 20 minutes. I pour my chilled wort into the fermenter and then add the 2 gallons to make about 5.5 gallons.
Re-hydrate 2 packs of Nottingham dry yeast, pitch and ferment at 65 to 70 degrees for 7 to 10 days.
Rack to secondary for 5-7 days.
Bottle and condition for at least 10-15 days.
Bottle condition with 4 oz. of cane sugar for a minimum of 10 to 15 days. A 60 day conditioning is recommended.
Enjoy!
Now... the reason I call this beer a "specialty beer" is because of the feel and after taste. I believe that because of the low mash temperature and "neutral" flavor of the Nottingham yeast, this beer has a hard time fitting into the stout category... it's just too dry, light and crisp tasting to be a stout or porter. I waited until my 2nd brewing and finishing before publishing this recipe. If anyone wants to give it a try and then offer any advice or criticism I'd love to hear it. |

Notes: Step 1. Add 3 quarts of water to a 6 to 8 quart sauce pan and heat to 165-170° and stir in grains. Steep for 30-45 minutes in a warm oven. Then pour grain mixture through a strainer into your boiling kettle. Rinse (sparge) grains with 2 quarts of 160-170° water into boiling kettle.
Step 2. Meanwhile, add 2.5 gallons of water to boiling kettle and bring to a boil. When the water is boiling, remove from heat; add malt extract and MIX WELL. Return kettle to heat and bring to a boil. Add boiling hops and boil for one hour. Add finishing hops at the last 5 minutes.
Step 3. When your hour boil is done, turn off the heat and place boiling kettle in a bath of ice water. Sanitize a stainless steel spoon and remove the lid and stir wort every five minutes or so to evaporate heat. Leave the spoon in the wort with lid ajar while doing this. After thirty minutes pour wort through a strainer to strain out hops into fermenter; add enough cold water to yield five gallons. When the temperature is below 80°, AERATE the wort by vigorously stirring to incorporate as much air as possible. Add yeast per package instructions. Ferment between 65-70°. |

Notes: This was my first all grain batch and decided to go big or go home. I realized a few things before I started. My lauter was definitely not large enough so I bought a bigger one and improvised.
I missed temperature on the Mash, hit 160+ and had too much volume to add cold water so I just went with it. I mashed out at 172.
I plan on main fermenter at least 2-3 weeks if not a month to a month and a half. Secondary will go as long as I can stand.
I don't want to be too pushy with this batch with the hop schedule as big as it is, I mean 4 oz at boil start, and another 7 at 10 minutes. Its a beast. |

| Notes: Looking for something very easy to drink with nice hop flavor and some body. I'm not a fan of the fruity esters in most Hefeweizens so I'll be using just Ale yeast. This is 100% just the recipe for Boundary Waters Wheat from Midwest Brewing Supply. I buy the 5 gallon kit and divide it up to suit the size of my current equipment. I also lowered the bittering hop addition some. |

This makes a tasty pale ale with a nice zesty grapefruit kick upfront from the hops that then leaves with a light, but slightly spicy, after taste from the rye grain.Great summer time beer for us in the hot South ! |
