Notes: Mix 29oz of pumpkin into 3 gallon of water and add enzyme. Bring mixture to 150 deg F and let stand for 30 min, stir to prevent burning. Rase the temperature to 170 deg F then remove from heat, let sit for 30 min and allow the pulp to settle. Decant the liquid and save. Dispose of the pulp. Return the liquid to the kettle.
While the grains are steeping mix the remaining 58oz of pumpkin, 1 tsp Cinnamon, 1 tsp Ginger Root. Finely chop the sweet potato and squash, then add to mixture. Place on a cookie sheet and bake for 20-30 minutes at 350 degrees F before adding to the brew kettle. |

Notes: 1) Add 8 quarts of 165 degree water to start mashing the whole grains (German, 2-row, wheat, and American) in a steeping pot as free grains, not in a bag. Should make ~2.5 gallons of mash, maybe a little less.
2) Steep for 60 minutes (or more). Raise temp to 170 for 10 minutes to finish the mash.
4) Cool to 115. Add a reserved handful of grains, and a couple of raw cherries. (To add bacteria.)
5) Ferment for ~3 days, keeping as close to 100 - 115 degrees as possible.
6) Strain grains out into muslin bag, into the boiler. Sparge with 4 quarts hot water. Add hops, malt extract, honey, boil for 60 mins.
7) Strain out the hops, and pour the wort into the primary fermenter. Ferment 5-7 days.
8) Washed and lean the cherries. Mash them up, and add to the 2ndary fermenter. Rack the beer onto the cherries.
9) Let ferment another 2-3 weeks. Strain any floating fruit bits off the top. Rack into a bottling bucket, and bottle.
10) After conditioning for ~2 weeks, it might be good to store in the fridge for a couple of additional weeks.

Finished 1030, 6 points higher that I wanted but yeast died at 9.4% ABV. But hops higher than style to compensate.
Took a Helles Bock and blended 20/80 to lessen sweetness of dopplebock. |

By popular vote the second collaboration brew will be a Tart Saison. We will vote of a recipe for the grist composition; all other factors for brewing will be left to the individual brewer. Souring will be open; kettle sour, pre- or post- primary lacto additions, copitch, or full mixed fermentations are welcome. Hopping schedule and rates are open. If you have any questions please ask. Great recipe: simple and produced a really delicious best bitter that was very true-to-style. Would make this one again. Might consider dry hopping with 12g Fuggles to lift the hop aroma but I don't think it's really necessary. |
