Notes: Add grain and oats to the mash and mash at 148 for 50 minutes.
Then add rice hulls and raise temp to 172 for mash out.
Boil for 60 mins. Then cool to 180 for a 20 minute whirlpool with a vortex.
Chill to 60 and ferment until FG is 1017. Then let is rest for another 3 days. Carbonate to 2.2 vol CO2. |

Notes: Mashed in at 148 F for 15 minutes. Decocted 1.5 gallons of thick mash at a boil for 30 minutes. Returned to mash to bring mash to 155 F. Mashed for 30 minutes. Sparged to support a 90 minute boil. Added hops per schedule.
Pitched at 50 F, fermented at 50 F for 5 days. Raised temperature 2 F every 12 hours until 70 F reached. Diacetyl rest for 4 days.

Notes: 1) Use unpasteurized Apple Cider from farm OR cider from the store that does not contain sulfite, sorbate, or benzonate, as these actively prevent fermentation. 1 Gallon = 8.35 pounds
2) Grains are used to provide natural nutrients to yeast as well as a more complex flavor and body. Mash grains as normal, adding in brown sugar and cider at sparge. Bring everything to 180 F for 5 minutes for the pasteurization of cider, then cool to room temperature. Add campden tablets.
3) Campden Tablets releases sulphur dioxide, which acts as a sterilant and antioxidant. Use one tablet per gallon Contains potassium metabisulphite. Each tablet contains 450mg of active sulphite per tablet. Two crushed tablets equal 1/4 tsp. Let sit for a day so sulphur dioxide can off gas out of fermentor.
4) If using fresh-pressed cider, Pectic Enzyme will help with clarification. Do this 12-24 hours after campden tablets. Add ½ teaspoon per gallon of must before start of fermentation in wine or fruit beers of pectic enzyme to get a better yield from fruit and to help with clarity. This will coagulate the pectins and drop them out of suspension.
5) WLN 1000 Use to increase health of yeast. Contains diammonium phosphate, essential vitamins and cofactors, nitrogen (amino acids, proteins and peptides) and minerals. White labs yeast nutrient is an effective boost for first and or late generation yeast slurry. Use .5 teaspoon for 5 gallons. Use 2X normal amount for cider (Per Chris Smith of NB). Add this and the yeast at the same time as the pectic enzyme, mix well, and then proceed to primary fermentation. Final Gravity will likely be BELOW 1.000 and that is OK.
6) After primary fermentation has ended, transfer to secondary and add cinnamon sticks and leave in secondary to taste.
7) Super-Kleer can also be used as a final fining agent to clarify the cider.
8) If kegging and back sweetening, add potassium sorbate as a stabilizer. This will prevent further fermentation. Use 1 tsp per gallon.

5 g de plâtre et 2 g de sel de mer ajouté au mout plus 12-15 gouttes de Mgcl
Eau bouiilie (10 litres) utilisés la balance est de l'eau de Source Eska et Labrador.
La levure Nottingham a été réhydratée dans 100 ml d'eau de source plus 1 c à thé de maltodextrose plus 2 gouttes de MgCl.
3 Décembre: Il y a maintenant 3 JOURS que la bière fermente en formant un dôme sur la pellicule plastique bleue du sac de recyclage. -La levure Nottigham semble donc très performante.
J'ai goûté à la bière de 24 h en 24 h et je vois une échelle de goût qui part du fruité-sucré abricot-pamplemousse-pin (au premier jour) à un ( nez) plus discret d'abricot et un goût amère-plaisant de noyau de pêche et de pelure de pamplemousse blanc! -Une bière qui s'annonce bien! -Très bien!
Le 7 décembre soit 6 jours après l'ajout de la levure, la bière fermentait encore en faisant bomber le sac bleu étanche sur le dessus du fermenteur. La levure Nothingham est très performante!
-Dès le 5 ou 6 décembre, la bière goûtée est excellente: nez et gout d'abricot-pêche très présent et taux élevé d'alcool perceptible.
TRANSFERT EN TOURIE: 7 décembre. La sédimentation (floculation) est importante puisqu'il y avait environ 1 pouce d'épaisseur de levure morte et de houblon au fond du fermenteur. J'estime avoir perdu au moins 2 litre de bière à cause de cela! J'ai environ 18 litres d'excellente bière en tourie. La bière est déjà quasi sèche au goût (le sucre ayant presque tout digéré).
8 décembre: ajout d'un cm de longueur de de poivre de «Sélim» préalablement déchiré d'une cosse de 2 cm.
10 décembre: ajout de 50 ml de teinture-mère de Chinook à la tourie.
13 décembre: ajout d'une extraction (à partir de ma précédente bière) de houblon Simcoe (15 g) dans 300 approx de de bière Moût en tourie (le Simcoe a bouillis 10 min dans le liquide)
14 décembre:EMBOUTEILLAGE: 15 litres de bonne bière ayant perdu son caractère fruité pour devenir plus «boisé-terreux» -85 g de dextrose ajouté à la bière pour la refermentation en bouteilles. La persistance en bouche de la bière est impressionnante!!
