heat a gallon of water to dissolve the sugar completely, do not boil. Mix all ingredients in a bucket or carboy with additional water to bring to 5 gallon total volume. Add the yeast and nutrient and let ferment.
After fermentation, rack to a bottling bucket, add the sorbistat, vodka and additional sugar to sweeten to taste. Bottle and cap. This will be a still lemonade with a kick you will not believe. |

Beer is too bitter for style
All of these things are absolutely true.
So, I actually genuinely like this beer. It’s just probably not NEIPA-ish enough to be called a NEIPA. |

| Notes: Once primary fermentation completes, give 1-2 day diacetyl rest. During this time, chop up a whole seedless watermelon into cubes and freeze for 1-2 days. This will pasteurize the watermelon. Defrost and beat watermelon to a chunky pulp. Pour into primary or place in bottom of secondary and rack beer on top, then cold crash for 1-2 days. My spigot clogged on me with watermelon chunks so I had to use a racking cane to the keg. Package, carbonate, and serve! |

Used WLP001Cal Ale and WLP007 Dry English yeast blend second pitch, Best of both worlds clean WLP001 and good Flocculant english( thick 2/3 cup of yeast, not really slurry, English is solid chunks)
2/13/2017 Dry hopped. FG was 1.011.
2/28/2017 Bottled. Got lazy and Dry hopped for 15 days! Tasted pretty good flat before bottling. Most hops I every added to the boil and dry hop. 6 hop varieties used. Firm bittering taste and lots of tasty flavor and aroma hop coming out of the bottling bucket

Notes: Heat 12 qts water to 170F in brew pot. Transfer to small igloo cooler equipped with flexible colander. Pour grains slowly into warmed water, tie off bag. Strike Temp 156
After 1 hr, add 2 gal boiling water to grains, open spigot and recirculate with gallon pitcher, maintaining fluid volume above grain bed. Recircultae until clear.
Drain into brew pot. Maintain fluid level by adding addition hot water during drain.
Stop at 6 gal. Take gravity reading
Bring to boil and follow hop schedule as indicated. Add extract at 30 min

I shall ferment separately and add raspberries & lemon zest/peel to one and leave the other one plain.
I have based this recipe upon the original Hoegaarden clone I did a few years ago.
I have upped the Coriander seeds and the oranges so we shall see how this turns out.
It should go down well at the wedding, who doesn't like a wheat beer!?!?! |
