Mouthfeel too thin for style
Beer is clear - (no haze)
Beer is too bitter for style
All of these things are absolutely true.
So, I actually genuinely like this beer. It’s just probably not NEIPA-ish enough to be called a NEIPA. |

Notes: Differences between this recipe and Papazian's:
1. Irish Ale Yeast instead of American Lager yeast
2. Dried yarrow, not fresh.
3. 4 lbs of extract, not 3. Charlie's recipe came out to an estimated 3.94% ABV. That's a little light, so I upped the extract amount for a fuller 5.26% ABV. |

Notes: Steep grains in 1.5 gallons of water at 155ºF for 30 minutes. Rinse grains and remove.
Add .5 gallons of water plus the dry malt extract and bring to a boil.
While boiling, add the hops per the hopping schedule.
Add Irish moss after 45 minutes of boiling.
Cool the wort to 75ºF and add to 3 gallons of cold water to primary fermenter and top off with cold water to make five gallons.
Pitch yeast and aerate well. Ferment in primary for 5 days.
Rack to secondar and add dry hops per schedule. Ferment for an additional 8 days.
Rack to bottling bucket and priming mixture. Bottle and condition in bottle for at least two weeks. |

Notes: the water should be at least 50% distilled and use of a Campden Tablet is crucial
on the stove method, heat 3 gallons of water, steep grains until 154, stay at 154 for 30 minutes then drain remove and heat to a boil, add dme and rice solids stir stir stir. then add 23 grams of Northern Brewer hops, start timer at 45 minutes add 1/2 ounce sazz at 10 minutes, cool in sink with ice, add water and wort to carboy reaching 5 gallons, stir, stir, stir then ferment cold with 05 yeast around 62 for 5 days, then heat up to 68 for 3 days
this needs to age at least 3 weeks cold before it starts to shine

Notes: 1- heat 23l of strike water to 78*c.
—grain bill to 18*c.
2- add 11L of strike water to tun.
3- add all grain to tun slowly, stirring.
—temperature should be around 70*c.
4-rest for 60 Mins.
5-drain 2L first runnings and pour back through sprinkler. Continue until clear of flotsam.
6-start draining mash tun to bottom rack/kettle.
—keep 1 cm water over grain then>
7-start sparging sprinkler with 70*c water until 23L volume is reached. Check gravity.
8-bring to boil.
—watch for hot break. Turn down heat to get through it.
9-add hops. Boil for 60mins.
10- wash and place wort chiller in kettle from 45mins.
11-Run iced water through chiller until pitching temperature (18*c).
12-transfer slowly to sterile fermenter.
13- start yeast in 1 cup starter mix @ 25*c in sterile cup. Cover with sterile foil for 15 mins.
14- pitch and set airlock with sterile liquid.
Edit:
*couldn't procure rice hulls. Sparge didn't stick anyway.
*mashed for 90 mins, boiled for 90 mins. Lost 10L in boil. Added 5 litres water post boil.
*added 30 g of hops to boil.
*immersion chilled to 26*c before pitch. |

Notes: Snark Lord is quite a huge Imperial Stout! As a delicious,
complex beer, there are a few special instructions for making sure this one comes out as close to the commercial version as possible. One pound of a sugar (not included) is added at the last 10 minutes of the boil. We recommend
jagggery, a non-centrifugal cane sugar. Jaggery goes by a number of names and can often be found in Indian or Asian grocery stores. However, you might try turbinado sugar or molasses as a substitute. The two included
vanilla beans can be cut open, scraped and added to the boil, soaked in enough vodka to cover for a few weeks then the resulting tincture added into the secondary at bottling time, or both! The 4 oz of included coffee can be cold steeped in about a quart of water by coarsely crushing the coffee beans (a sandwich bag and a rolling pin or coffee cup work well for this), adding them to the quart of water, and refrigerating for up to 24 hours. You can then
strain out the coffee beans and add the cold steeped coffee to the secondary or in the bottling bucket/keg at packaging time |
