Notes:
Single infusion mash at 150° F (66° C) targeting a mash pH between 5.2 – 5.4. Sparge as you normally would and collect your runnings. Boil for 90 minutes. Chill wort below 170° F (77° C) or below (if possible) before adding whirlpool hops for 15 minutes. Cool wort to 66° F (19° C) and pitch yeast. Dry hop with 2 oz of Citra hops 48 hours after the start of primary fermentation, being careful to prevent as much oxygen pickup as possible. Once final gravity is reached, add the remaining 5 oz of Citra dry hops for 5 days. Crash and carbonate to 2.5 volumes of CO2.

Notes: After bottle aging for a few weeks, beer takes on a nice, balanced profile. Hops are relatively subtle compared to many current IPAs, and work nicely with the caramel malt. Notes of pine.
Beer is an amber color, very slight haze, with a very nice carbonation level.
Solid, but not the hop aroma I was hoping for. More of a balanced pale - bit too dark in color. Would likely not brew again. |

A brewing modern style of putting nearly all the hops in at the end to keep more flavour and aroma. the 10g in at the start is only really to reduce foaming during the boil.
top-up boil with boiling water
The oats are for body/mouth feel - taking a leaf out of the Cloudwater book.
MALTS:
I'm actually using 4kg of Crisp Clear Choice Ale Malt - but I can't pick that. It's specially produced to reduce chill haze - also it makes for more stable beer. The haze may not matter that much as this beer will probably have a lot of hop haze - a murky ipa.
I like giving my beers a slightly more complex malt flavour, even though they are very hop heavy! The vienna malt works well with the heavily-hopped beers because it adds a great degree of malt character without overshadowing the highlighted hops.
A bit of crystal malt to give a bit of sweetness to balance the bitterness of the hops. |
