Wanted to use Nelson, Huell and Blanc for melon and grape skin, over a tropical backbone of hop character from Vic and Galaxy. The latter two in the whirlpool as I've found previously they can harsh hop bite in DH.
Rye because it sounds like a nice addition. Not sure why the oats are there, but it is a popular recipe that has them, and they might give something in head retention. |

Notes: Recipe constructed off Lawson's Double Sunshine IPA and stepped down to emulate Lil Sip. Hoping to get 75% efficiency, last batch got 83% but was smaller grain bill.
Going to do hopstand/whirlpool and toss hops in at around 200* and let the whirlpool cool down itself for 30 mins then crash to 68* and pitch yeast.
Hold until clears diacetyl and crash to 55* per their recommendation and transfer to a purged keg and dry hop at 55-57* for 5-7 days.
Cold crash to 32 for a solid day or day then transfer to serving keg. |

Notes: 1. Mash grains at 154°F for 45 minutes.
2. Vorlauf until runnings are clear, then run off into the kettle.
3. Sparge the grains to obtain 6 gallons of wort—or more, depending on your evaporation rate. Boil for 60 minutes.
4. For the lactose, remove the kettle from the heat, stir in the lactose, return the kettle to the heat, and bring it back to a boil for the remaining 10 minutes.
5. Chill wort down to 75°F, aerate wort, and pitch yeast.
6. Hold at 75°F for 24 hours once signs of fermentation are visible.
7. Allow the temperature to rise to 77°F during the remainder of fermentation, following the dry-hop schedule.
8. After adding the vanilla, dry hops, and any fruit, allow to sit at 78°F for 5 days. |
