Approximately 30 lbs of red Muscadines were Juiced yielding 2 .125 gallons of juice. The SG was measured at 1.061 and the weight of the grapes for the recipe was adjusted to give that SG.
2 campden tablets added.
9/14 Added Yeast Nutrient, Pectic Enzyme, Wine Tannin. 1/2 packet of Premiere Classique yeast.
4/6/23 had transferred the original ferment in November. Today mostly clear, some ppt and crystals. transferred to a clean vessel today. SG =1.002. Taste, fruity, dry, some tannin. No off flavors.
Give it a few weeks to settle and bottle. Noticed a white film on surface of liquid and walls of carboy.
Transferred 4/24/23 to pail for bottling will add campden and sorbate. Tasted again, like before, good. |

10g more Hallertau than previously
Add 50g Hallertau bittering hops with 60 minutes remaining in the boil.
Add the sugar with 15 minutes left in the boil.
Add whole whirlfloc with 5 minutes left in the boil

Topped up to 2L
Target pitch yeast temp 20c, actual 22c. 10:45pm.Wrapped in cold towel.
SG: 1.063, target was 1.061
Spunding valve open for the first 24 hours then spund at 2PSI
FG seemed to be 1.024 so ABV corrected could be 7.46%?
Will take 7 days to ferment fully but with lower sugar, it was finished (and FZ1 was leaking) so Day 5 kegged it. Pressure at c2.5PSI, needs carbing and chilling |

Notes: This beer is phenomenal. We drank it at work before and after the GABS beer fest here in Sydney, and we enjoyed it just as much, if not more, that most of the beers we tried at GABS.
I'm going to tweak the hops just a bit, the original recipe was with Eclipse, and this one will be Citra, and I will see which I like more. I've also adjusted the Rye from .85kg to 1kg to get a bit more mouthfeel out of it. |

Notes: Heat 7.5-7.75 gals of water to 166F to attain mash temp of 152-154F
Mix grains, add brewing salts to grain, dough in grains into mash tun, stirring thoroughly. Mash for 60 mins.
Move to kettle and boil 6.5 - 7.0 gals of wort for 60 mins.
Chill to 170 then add whirlpool additions then let steep for 60 mins, then continue chilling to pitch temps.
Pitch yeast.
