Notes: Boil hops for entire batch at flameout.
Once chilled pull 5.5 gallons for Chocolate Latte Blonde and add Lactose. Flagship yeast is for this batch. Once fermentation has completed add chocolate, vanilla, and coffee extracts slowly to taste.
Once 5.5 gallons pulled, bring temp back to 160 and add hopstand hops. Dry Hop yeast is for the remaining wort for NEIPA.. Dry hops are for NEIPA as well.

Notes: Use a ramped mash, start with warm (80°) water, then heat gradually to 170 degrees and hold for 10 minutes. Heating should take at least two hours.
Alternate yeast - Baker's Yeast.
Mash grains and juniper berries (branches, if available, 2 oz for 5 gal, see if you can source in KY)
Prior to brew day, toast rye malt: Preheat oven to 350, spread the rye on a baking sheet covered in aluminum foil, bake for 30 - 45 mins. The malt should be nutty, bready, or raisin-like.
Juniper: Use thin branch tips of Eastern Red Cedar, if available. Sub juniper berries if juniper tips are not available.
When mash is complete recirculate until clear, sparge to get approx. 5 gal (1.35 gal) wort. Boil 10 mins with 5 IBUs of neutral hops. Cool to fermentation temperature and pitch Kviek yeast at 85 degrees, baker's yeast at 68 degrees. Ferment until gravity has dropped to 1.035, or when the beer tastes sweet but not cloying. Cold crash. Carbonate very lightly.

add 4 oz Pilsen DME to 2 quarts spring water with 1/2 tsp yeast nutrient and boil for 15 mins.
Chill to 70 and pitch yeast, aerate using stir plate

Using LME to DME conversion for extract amounts, since recipe called for 3.3 lbs Pilsen LME and 2.5 lbs Munich LME (and I want to add ~half at early and late times in the boil)

3.3 lbs LME = 2.7 lbs DME
2.5 lbs LME = 2 lbs DME (Keystone does not have Munich DME, so weigh out the LME)
Steep grains (4 lbs total) in 3.5 gallons distilled water with minerals as noted in Water Chemistry section for 60mins at target temp; raise to mashout temp, and sparge as noted. Add boiling top-off water and bring to boil, adding hops/extras per schedule.
1/2 the DME and LME at 15 mins into boil; remaining 1/2 at 15 mins left in boil
Chill to 52F. Pitch yeast*, aerate, and place in temp-controlled mini-frig to ferment
*** Save 2 quarts wort to sanitized growler (that can have a cork/airlock added), save 1 tsp yeast slurry to separate sanitized container. Refrig both.
When main fermentation has substantially slowed, take saved wort and pitch yeast to it, allowing to ferment vigorously. Then, add back to main fermentation and allow it to complete at 52F.
Perform a diacetyl rest (raise temp to 62F) for 2 days.
Then lager (35F) for 7-8 weeks.
Xfer to sanitized keg, carbonate, and bottle. |

Notes: Mill the grains and mix with 15 liters of 73°C strike water to reach a mash temperature of 66°C. Hold this temperature for 60 minutes. Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains with 3.3 gallons (12.4 l) of water and top up as necessary to obtain 6 gallons (23 l) of wort. Boil for 90 minutes, following the hops and additions schedule.
After the boil, add the late hops and honey and whirlpool for 15 minutes (ensure that the honey has fully dissolved). Then, chill the wort to slightly below fermentation temperature, about 65°F (18°C). Aerate the wort with pure oxygen or filtered air and pitch the clean yeast.
Ferment at 66°F (19°C) for 5 days, then let the temperature rise to 72°F (22°C) until primary fermentation is complete. Transfer into a secondary fermentor and add Brett mix and oak cubes, along with part of the oak-soaking tequila. Let the beer rest until a noticeable funk develops, then bottle or keg the beer and carbonate to approximately 3 volumes.
GABF gold medal–winner and Two Rivers’ Head Brewer Josh Bushey recommends using less oak and tequila than you think will be necessary. The recipe here gives you a modest start. “You can always add more later,” he notes. Their third anniversary beer (upon which this recipe is based) featured moderate oak tannins, light agave/tequila flavor, and good complementary tropical-fruit esters and funk from the Brett. |
