BrewDog vs Fierce Beer. A rebrew of the Fierce Beer & Flagship bar Collabfest 2017 winning beer, Very Big Moose is being scaled up to our Ellon brewhouse. Its probably best to parti-gyle this beer as this will have a run off time of 6 hours+!!! Set up the mash and see what is collected overnight, then add more hot water to do your second mash and make a low (3%) beer from your residual extract.

Masher les grains clairs (golden promise, avoine et brown) normal.
Mettre les grains foncés (roasted barley, black patent, chocolate) dans le GF pendant le sparge, pour un total de 15 minutes, en montant graduellement la température.
Mettre le Candi syrup à 15 minutes restantes du boil.
Fermenter x 5 jours à 18C
Jour 5 : monter à 22 pour diacetyl rest.
Jour 15 : transférer en tourie pour maturation.
Jour 90 : Ajouter copeaux de chêne au bourbon
Jour 102 : Mettre en bouteille avec 150g de sirop d'érable
Maturer minimum 6 mois. |

This Dogfish Head 90 Minute IPA Clone is created with a single infusion mash at 150°F (66°C) for 60 minutes.
Boil for 90 minutes. Combine all of your kettle hops into one bowl, weigh out 0.2 ounces (5.6 grams) of the hop mixture and add to the boil every five minutes for the duration of the boil.
Ferment at 72°F (22°C) until gravity reaches terminal. Rack into secondary and add dry hops for at least one week. Package and serve. |
