Notes: Mill the grains and mash at 156°F (69°C) for 30 minutes (or as long it takes to pass the iodine test). Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains with 168°F (76°C) water and top up as necessary to get about 6.6 gallons (25 liters) of wort—or more, depending on your evaporation rate. Boil for 75 minutes, following the schedule for the boil hops.
After the boil, chill the wort to about 64–66°F (18–19°C). Aerate well, add the yeast nutrient, and pitch plenty of healthy yeast. Ferment at 68°F (20°C) until it reaches final gravity, then give it 2 more days to clear diacetyl. Chill to 42°F (6°C) if possible (if not, proceed at 68°F (20°C), but reduce the oak chips by half). Prepare and sanitize a secondary fermentor and place the oak chips and whole-cone hops in a weighted hop bag. Purge the secondary fermentor with CO2 before racking beer into it and adding the first round of dry hops. If possible (i.e., using a conical), dump the cone after the first 3 days, then add the second round of dry hops. After 3 more days (if possible), dump the hops again. Allow up to 2 weeks to clear diacetyl (see below), then crash, package, and carbonate.
BREWER’S NOTES
Very important: On the day of the first dry hop, take a gravity reading of the beer and note this in your brew log. This exercise will be particularly helpful as it relates to hop creep. Three days after the second dry hop, take a gravity reading and note it. Do the same the following day. Once you go 2 days in a row where your gravity has not dropped from the secondary fermentation from hop creep, you can proceed with bottling or kegging. Depending on your conditions, you might have to wait up to 2 weeks to clear the diacetyl from hop creep. About those bittering hops: There is a limit to how much alpha acid can be isomerized in beer and also to how much can be perceived. While the calculated IBUs for this recipe might be about 195, a spectrometer reading measured them closer to 80. (The yeast also take up a large portion of isomerized alpha acids, which is why the yeast from an IPA fermentation tastes so bitter.) |

SMaSH IPA
13 pounds of Quebecois grain, pre-crushed
20 liters of tap water for mashing
MASH:
1 hour
30 minutes at 64°C
30 minutes at 69°C
Raise temperature to 80°C before sparging
Sparge with aroud 10 liters for a total volume of 24 liters
BOIL:
60 minutes
Add 1/2 cup (1.5 oz) of Citra hops pellets at 30 minutes
Add 1/2 cup (1.5 oz) of Citra hops pellets at 15 minutes
Cool wort using immersion chiller and cold water, approximately 15 minutes
1 tea spoon yeast nutrient
YEAST:
Use Safale US-05 yeast, hydrated 1 hour before pitching
FERMENTATION:
Add 1/2 cup (1.5 oz) of Citra hops to fermenter
Original gravity: 1.055, potential alcohol: 6%
Kegged on March 26 after 16 of fermentation
Final gravity: 1.015, final alcohol potential: 6%
Note:
By using a Single Malt and Single Hop (SMaSH) approach, this recipe produces a unique variation of India Pale Ale (IPA) by using Quebecois grain and Citra hops pellets.
*The addition of vanilla would likely give it a slightly sweet and creamy flavor profile, which is common in Milkshake IPAs.

Boil for 60 mins adding hops as listed.
After the boil, turn off heat, add the final addition of hops, and begin a vigorous whirlpool in the kettle.
Let the hot wort stand for 20 mins, then chill to about 65F.
Aerate with with pure oxygen and pitch the yeast.
Ferment @ 67F for 7 days.
Add the dry hops and raise the temp to 72F for five more days.
Once the beer reaches terminal gravity, rack to keg and force carbonate.
Target a carb level of 2.5 volumes (about 12psi @ 38F).
You may want to cold-crash the beer prior to packaging to 35F for 48 hours to improve its clarity. |

Notes: 1/23/22-Came in less fermentable, but tasty and the body is good, so 1# of rye next time also. Next time just put cereal mash in the mash tun, it gummed up the mill badly. Also, wonder if this would benefit from an overnight mash. Changed the hops to fit availability. WP is really Dip-Hop. Shorten DH to 2 days next time. Will use this mineral/acid profile:

**12/9/2019-Dropped the acid malt. Efficiency suffered a lot, not sure if that was because of the higher ph or the lower mash temps. Since I moved to my garage, my equipment is colder, apparently, for mashing, and so I keep missing my desired temp. Going to have to adjust something. And I didn't get as much liquid out of the mash this time either, which is really strange. Maybe I needed to squeeze the bag better. Could be the bag is too small for the mash tun and so the grain is too compacted for good conversion.
**8/17/19-Reduced all the malts by 25% and changed the hops to fit what I have in the freezer, so I can brew a regular IPA. Ended up with about 1/2 Gallon more than I expected for the fermenter. It was up to the bottom of the plug in the carboy. Blow off tube is working as it should, so I'll end up with more top-cropped yeast for next time. |
