- 31.5L mash as boil time cut down to 40 min from 60 min in last batch.
- Kept same "light hoppy" water profile.
- Use 30.5L mash next time, still had about 1L left over fermenter volume.
- Ferm temp 19C, upped slowly over a few days to 20.
16/11/18 - FG: 1012, cold crashed.
17/11/18 - Kegged and carbed at 35psi for 3 min.
Batch #2 - 13/3/18 - 5.17% ABV
- 32L mash
- Gladfield American Ale (5kg) instead of Weyerman pale
- Weyerman Munich 2 (0.35kg)
- Mash and boil time shortened - 67% efficiency
- Hop profile back to recipe
- Yeast x3 packs rehydrated in 300ml/30g (DME) & 1/4 tsp yeast nutrient on stir plate for 3 hours
- Yeast pitched at 23C

Notes: Heat 1 Gallon water to 110 F and mix with Honey in a 7 Gal fermenting bucket. Shake to thoroughly mix and aerate. Add yeast nutrient and additional water 1 Gallon at a time, aerating after each addition, to a total of 6 Gal.
Use 1/4 cup of must to rehydrate Lalvin D-47 yeast. Chop raisins and cranberries, and add to must. Add yeast; primary fermentation should take between 14-21 days.
Rack to secondary with 2 Lbs of cranberries, ginger, orange peel, and cinnamon in a sanitized mesh bag for 10-14 days.
Rack to tertiary with pectic enzyme and fining agent for 7 days. Cold Crash if necessary for clarity before bottling. Add Potassium Sorbate at bottling to kill yeast and backsweeten if necessary.

1. Start with strike water of 10.1L (2.66G) @ 164.33F.
2. Put in 8 lbs of grains.
3. Rest at 152F for 60 mins.
4. Assuming grain absorption of 0.13G/lb, should end up with 1.62G in brew kettle.
5. Prepare for dunk sparge by adding 9.7L (2.55G) to secondary brew kettle. Add grain bag for 15 minutes @ 170F. Squeeze.
6. Begin partial mash out in primary brew kettle for 15 minutes @ 170F.
7. Add sparge water to primary brew kettle. This should result in 4.51G of pre-boil wort.
Took twenty minutes to get to 164F. Didn't drop below 160. 158 after 5 minutes. 155 after 10 minutes. 150 after 50 minutes.
Shit, forgot to add 0.25 lbs of flaked wheats.
Hydrometer is reading 1.04 in water.
Took 25 minutes to boil.
Ended up with 4.6 gallons of pre-boil wort... Hydrometer reads 1.04 @ 118F = 1.048...way below my target OG. If I drop 4 points, its actually 1.044. If 1.044 with 4.7 gallons of PB wort, then efficiency is 75.5%, not bad. Will add 0.75 lbs of corn sugar @ 15 minutes to bump OG.
52 minutes after boil to get to 80F with ice bath.
Now have 1.070 OG with 4.0 gallons of beer! I guess its more like 1.066 based on calibration... That is 77% efficiency!
6 days after pitching, FG is at 1.020 - two gravity points higher than expected. 72% attenuation versus 70%, not so bad. Started to dry hop with 2 oz.
Bottle Carbonation: 2.4 Volumes of C02. 2.9 oz of corn sugar with a cup of boiled water for 3.5 gallons.
First taste on November 13, 2014 - 15 days after bottling. App: completely opaque. Decent head if poured right into clean glass. Aroma: fruity and grassy notes. Taste: Bitter and dry. Fruity. MF: high carbonation. Light-medium body. Overall: really good! even after two weeks in the bottles.
Description: Find the lightness in this deep, dark beer. While it may be completely opaque, reminiscent of a black hole, the aroma and taste will remind you a beautiful nebula, similar to that of an IPA with a dry bitterness coupled with fruity and grassy hoppy notes. Not for the faint of heart. Drink if you dare. 6.1% abv, 50 IBUs.
Tasting on november 25: off-white head that fades quickly. Extremely black with hoppy, dry taste and bitter aftertaste. |

Notes: Clone of SweetWater 420 Extra Pale Ale. The ingredient list comes from their website, which says "2 Row, Munich, Wheat, Midnight Wheat", hopped with "Centennial, Cascade", and dry hopped with "Cascade".
It's funny that they describe it as a "West Coast style Extra Pale Ale", because as far as I've seen in the few years I've lived on the West Coast after coming from Atlanta, everything here is MUCH hoppier. I think that's what makes 420 such a favorite: it's hoppy enough to be interesting, but not so hoppy that it repels people who don't like strongly hopped beers. |

Put honey, molasses and brown sugar in sauce pan with an inch of water. Warm slowly until honey and water stir smoothly
Let simmer for 10-15 minutes on low
Rehydrate wine yeast at 98-105 degrees Fahrenheit
Add must and raisins to 1 gallon fermenter
Temp the mixture and add cold water to 1 gallon and ensure under 100 degrees
Agitate mixture to oxygenate and combine cold water with honey juice
Pitch yeast and seal with lid
Add airlock
Check in six weeks or sooner and strain out fruit zest and ginger gratings once flavor profile is reached
