Notes: Ignore the honey as a "fermentable", its a flame out edition for taste and recipe would not save without a fermentable.
Procedure:
1. Add water to kettle
2. Boil for 10 minutes
3. After flame out chill < 200F, stir in honey (preferably local honey, but its OK to use some crystalized honey that's in your cupboard going to waste)
3. Chill to 170F
4. Lower pH by adding lemon juice (to 4.6 or lower) - just a small squirt of lemon juice should be enough
5. Add hops (2g per gallon) and let stand for 20 mins (use whatever you like or have laying around)
6. Filter out hops with cheesecloth or a mesh bag
7. Cool to serving temp
8. Carbonate

Brew day and tasting notes:
The brew day was simple, about 2 hours or less.
The final product was much better than v1. The hop flavor is much better but could probably do this with 4oz total, not 6. I may use different hops next time. I think this will be a good use for homegrown hops.
Also I think I was a little heavy on the honey, will probably back it back down to about 4oz next time. |
