I had a pound of pecan smoked malt that I wanted to get rid of so I put it in this recipe. You can sub that with more Marris Otter. |

polenta added at 70C. Stirred until mashed then 2-row added at 66 C.
1Kg of polenta used. O.G produced from mash was 1.032ish. Adjusted recipe to 0.2 Kg flaked corn.
0.5 Dry malt extract added for ABV boost.
Final wort O.G: 1:052. Therefor polenta adjusted to 0.5 flaked corn equivalent.

Tasting note July 19th: Hope schedule on point for a pseudo-lager. Beer is nice and crispy, not a cream ale! Only strangeness from tartaric acid and salt from the polenta. |

Not boiling down the wort to a syrup this time, instead I'm increasing the oat content in the hopes of getting better body without the overpowering flavors and fermentation issues.
During last ~20 min of mash, start the bochet in the boil kettle; if the mash goes a little long, that's fine. Rehydrate the bochet directly with first runnings when it's reached the correct color.
Pitching the yeast at 85-90f, increasing to 94 afterwards.
Add 7g of Fermaid O just after lag phase, and another 7g of Fermaid O around the 1/3 break if I can manage to time it.
Usually I keg, but I think I'll bottle this time for gifts.

Notes: Dry-hopped blue moon clone. Hazy/cloudy because it's a wheat beer. Great hop flavor & aroma, citrusy, refreshing. Excellent summer beer.
Directions:
Heat 6.7 gallons of strike water to 161F
Mash in and ensure kettle reaches 155F.
Mash for 60 minutes.
Bring to a boil, add Hallertau. Set timer for 50 minutes.
At end of timer, add crushed coriander. Set timer for 5 minutes.
At the end of timer, add orange peel. Set timer for 5 minutes.
At the end of timer, cool to 100F as quickly as possible.
Put in fermenter bucket, allow to cool to pitching temps in fermenter.
Pitch yeast.
Ferment 10 days or until SG is stable.
Keg and enjoy.
