Notes: 1. Bring 2.25 gallons filtered water to 160°F
2. Add nylon bag containing grains to water
3. Cover and steep at 152°F for 1 hour
4. Squeeze liquid out of beer with tongs
5. Bring mash to boil
6. At first boil, add 0.2 oz Perle hops.
7. With 30 minutes left in boil, add 1 tsp yeast nutrient, 1 oz maltodextrin.
8. With 5 minutes left in boil, add 1/10 tablet whirlfloc to wort
9. After 60 minutes, flameout and add 0.1 oz Hallertau mandarina hops. Leave hops in wort for 15 minutes after flameout.
10. Cover, let cool to room temp overnight
11. Pour mash through filter into fermenter bucket, aerate.
12. Pitch one packet Lutra Kveik yeast into mash at 72°F.
13. Put lid on bucket with airlock, let ferment 12 days at basement temp (64°F).
14. After 12 days, rack to secondary fermenter, let sit at basement temperature (64°F) for 7 days.
15. Bring 1 C of water and 1.0 oz priming sugar to a boil
16. Cool sugar solution to room temperature, rack beer onto sugar solution.
17. Bottle and let condition for 6 weeks before enjoying.

Notes: - Light easy boil reduces Maillard reactions and keeps this very pale.
- Use quality fresh ingredients for best results on this beer! The rice is optional but I find it dries the beer out and leaves a better crisp flavor. Glucoamylase - 10 mL will do the same thing.
- Mash at a low temp 149-150° for a light body.
- Use very low mineral content pure water. I start with distilled and add very little mineral salts.
- Medium carbonation, to much will give a carbonic bite off flavor.
- I've also tried WLP940 Mexican lager yeast,(supposedly from Modelo) that turns out a wonderful pils. Wyeast 2206 and WLP860, (860 gives a more malty flavor), is surprising tasty also given enough lagering time. Stay away from the Saaz hops if substituting as the spicy peppery taste will hide everything else.
- Use the correct glassware to drink.
- Very dry and clean that attenuates well producing a tasty crisp pilsner. It pours with an extremely bright white head that dissipates to a thin line that lasts. Clear and brilliant. |

Notes: Fermenting 1 gallon in carboy. Do not filter, but try not to put in much trub material.
Save some wort for speise/gyle. 3.3-4 vols Co2. Shooting for 3.5. About 22 oz - so set aside a sanitized bomber of wort in fridge. If 22 ounces, will get about 3.7 vols.
Primary ferm at 62F first few days, about 3, Then 65F maybe another 3, finish at 68F.
Boil, then cool speise. May pitch with some left over yeast or from bottom of primary. Mix all in bottling bucket, then bottle.
Secondary ferm in bottles at 68F. At least 3 weeks.
The Infusion/Decoction schedule is:
6.4 qt strike to 113 with grain - 10 min sit
Boil 1.5 qt with salt, add to grain to bring to 131 - 10 min sit
Boil 2.1 qt, add to grain to bring to 147
Take about 2.9 qt with 30-40% grain and boil, add back to bring to 161
I'm at altitude, so boiling is slightly under 212, This brings approximately 6.3qt strike, 1.6 qt, 2.2 qt, then 3.2 qt decoction.

Other note: may use hallertau mittelfrau for more traditional flavor. Next time will use this hop. Tahoma has a bit of lemony flavor to it. No matter the hop you use, use very little. May also skip 10 min hop addition if so choose. |
