Método BIAB para Braumeister 20l, eficiencia 72%
Agua total: 30l.
-Despues de terminado la primera fermentación hice una adición de 5grs de Enzima de Glucoamilaza,(Glucoamylaze OPTIZYME) la cual sirve para fermentar los azucares complejos de darle un corte seco al poco amargor que esta cerveza tenga, logrando asi un sabor redondeado entre frutal, con escaso amargor ligero.
-hoy 23/06 (tres semanas de cocinada) hice la primera degustación y puedo contarles que estoy súper satisfecho con el resultado final... la recomiendo 100%
- los parámetros finales de la receta son los siguientes:
- ibu :37
- Og : 1060
- Fg : 1010
- Abv :7%
- los muestro acá dado que la receta muestra parámetros por cálculos que no se pueden Modificar y en este caso, difieren de la realidad.

Notes: Styled after Duvel: Slightly fruity, dry aroma, well-hopped beer and with a slightly bitter aftertaste
Recipe inspired by a Duvel clone partial mash from a magazine.
Duvel website describes hops used are Saaz & Styrian Golding.
>Make a big yeast starter (3L for 5gal batch).
>Option: alternate yeast is White Labs WLP570 (Belgian Golden ale)
-->used dry trappist yeast this time
>In steeping pot, heat mash water to 72C.
>Add crushed grains in grain bag
>Steep grains at 66C for 45mins
>Prepare brewpot boiling water
>When steep over, add subset of brewpot water (~32% of original steeping volume) to the grain tea in steeping pot, then pour all through the mash grains via colander into brewpot.
>Heat brewpot to boil
>Stir in dried malt extract
>Add hops & begin 60min boil
>With 15 mins left in boil, add kettle candi sugar, hops and Irish moss, then turn off heat and stir in light dried malt extract (substituted for original liquid malt extract)
>Stir well to dissolve extract, then resume heating (keep boil clock running while you stir)
>At end of the boil, add last charge of hops, cool wort and transfer to fermenter.
>Aerate wort and pitch yeast
>Ferment at 20C
>Option:The brewers of duvel pitch at 16C and let the temperature rise to as high as 29C during primary fermentation.
>When primary fermentation is complete, rack to secondary and add dosage candi sugar dissolved in hot water held at 71C for 15 minutes.
>Bottle when beer falls clear |

In reality I mashed in, drank too much and mashed out four hours later... I meant to do a second runnings beer but ended up collecting all the runnings in one pot and had to boil down for four hours to get my five gallons! Not recommended - it turns into a 22 hour brew day.
Hops:
1.5 oz Centennial (8.7%) - added during boil, boiled 90 min
1 oz Amarillo (8.6%) - added during boil, boiled 30 min
1 oz Cascade (5.5%) - added during boil, boiled 10 min
Extra Ingredients:

Yeast:
1 pack of Fermentis S-04 Safale S-04
1 pack of Fermentis US-05 Safale US-05
Direct pitch, no starter, no re-hydration - fermented out in 4-5 days!!!

I ran out of Two-row malt and substitute in Pilsner malt; try domestic Two Row or Marris Otter!?! |
