Going for Sapporo or the like with 100% pale malt and Sorachi Ace hops.

2018-11 batch: won the day at a recent party. Beer had time to lager (1.5 months from brew day) and was 99% clear. Taste was crisp and clean; the Sorachi Ace character was there but not too aggressive. Will definitely make again. |

8/20 Brew Day
Mashed in 2.5G @154F for 1 hour: grains, pumpkin puree
Sparged mash grains with 1/2 G of water into brewpot
Brought to boil, added 1st bottle of LME and DME, hops
Boiled 45 minutes, added late addition malt extract
Boiled 15 minutes. At flameout added spice.
Added approx 3G of cold water to bring to 5.5 G. Cooled to 76F.
OG 1.056 @70F.
8/21 - pitched yeast.
8/28 - racked to secondary. SG 1.012 @70F

Notes: Was originally trying to create an all extract clone of ST 2X IPA. I found a couple of recipies out there that use just Citra and Columbus. I wanted to try for a little bit more pine so Im adding some chinook for flavor, Amarillo for aroma, and will dry hop with the Simcoe. I wrote ST and they sent a little bit of help, but nothing specific...
Have brewed this recipe a couple of times and this beer has become something aprt from the 2X IPA goal. It is really much closer in tast to Victory Dirt Wolf. |

Notes: The original Recipe calls for 4.75lb's of each malt however I upped it to 5lb's each since it'll be cheaper at my LHBS. A bit more ABV but that's never a bad thing.
4/15/19 10ml of Lemonade concentrate added to a pint is the equivalent of one 12oz can of lemonade concentrate for 5 gallons. Going to try it when making a wheat ale. |

Roasted pecan nuts in oven for ca 10 mins, right before they scorched.
Mashed in at 70deg C and let sit for 60mins, no heat or water added beyond first infusion.
Collected 25l of wort at ca 1.041.
OG : 1.06
Chilled to 20 deg and pitched yeast including starter.
Fridge set to 18 deg ambient.
Let rise to 20 over 2 days
Keep at 20 for 6-7 days.
Rise to 22 for 20-35 hrs.
Cooled down to 8 deg for 5 days, then racked to secondary.
FG 1.013 -> Abv = ca 6.2%
Added 15g of Summit pellets for dry hopping.
Let rise to 22 deg for next week.
Bottled on the 26th. |

| Notes: The WLP300 generate quite a lot of banana flavor if you do not watch the fermenting temperature. This yeast fermentation is pretty wild and so if you only measure the room temperature when you ferment, try at least to keep the room temperature down to about 15ºC when it peaks out. Go ahead and increase it to 17 after about 4-5 days allowing the beer to dry out. |

| Notes: My efficiency has been a little low, probably closer to 65%, so i'd suggest cutting down on the grain bill slightly. We ended up with an OG of 1.045 and FG of 1.010. Haven't had a chance to try one yet, everything went well on brew day, we're expecting this one to be an easy drinking summer beer. |
