Kaffir Leaves: make an infusion by boiling 4 or 5 leaves (which are first torn into pieces) then added to a pint of boiling water(or enough water just to cover) and steeped until cooled - add to beer for 3 days
Beer description:
Pale ale full of tropical vibes from loads of aromatic american hops, balanced with kaffir lime leaves. All backed up with a hint of malty sweetness. A light Summer Ale to enjoy over the long evenings. Can’t promise you an escape, but will take you a pint closer to the paradise! |

Notes: To make Candy Lime Peel Recipe
Peels from 3 limes no pith
Dissolve Equal parts raw sugar/ water 10 oz
add peels to sugar syrup bring to simmer 10 minutes
cut heat let stand for 15 minutes
repeat simmer stand process three times
remove peels Dehydrate in oven overnight
Note : add syrup mixture to wort at flameout
2 weeks primary
1 week secondary add Crushed Candy lime peels + Dry Hops

Notes: Bière typée Blonde / Blanche
Au Barbe Rouge et Rooibos en Dry Hop, à voir encore pour combien de jour??
DI: 1,05°P
Densité 10 jours: 1.006°P
Bière: à refiltrer car malts concassés trop fins et froment pas mal présent. Belle couleur blanche assez clair (dû à l'Irish Moss certainement).
Début de filet/ dépôt sur le dessus du moût pas bon signe. Tout enlever pour relaisser fermenter tranquillement.
Ajout 150g ROOIBOS à 10 jours pour une 5 jours.
RESULTAT: couleur joli Rouge/ Orange grâce au Rooibos.
Assez transparente et pas opaque. Goût assez aigre en bouche, bière sans trop de corps. On ne sent pas le Rooibos qui devait apporter des touches de "vanille thé" et rondeur supplémentaire. |
