Notes:
Mash the grains at 156°F (69°C) for 60 minutes. Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains and top up as necessary to obtain 6 gallons (23 l) of wort. Boil for 90 minutes, following the hops and additions schedule. After the boil, chill the wort to slightly below fermentation temperature, about 70°F (21°C). Aerate the wort and pitch the yeast.
Ferment at 70°F (21°C) until the completion of primary fermentation (about 9 days, depending on the temperature). Rack the beer into secondary and add the oak chips. Let the beer age with the wood. Use your palate to decide how long. Oak chips are pretty quick; a week or so can be plenty. |

Notes: After the boil, cool to 80c and add 30g each of Amarillo, Mosaic and Sabro. Allow to whirlpool for 30mins before a further 30min stand with out your pump on, this allows the hop material to settle to the bottom of your brewing system but also mimics the extended transfer time you would see in a commercial brewery.
Secondary additions:
Once fermentation has completed, add your dry hop addition – 50g each of Sabro, Amarillo and Mosaic, we suggest that if you can cool the beer to around 14c before adding the hops, this can help. This big juicy New England IPA really benefits from being able to rouse the hops after 24 hours of contact time. Leave the hops in contact for 2-3 days in total, rousing each 24 hours if you can. After this contact time, if you can, remove the hops and the move to cold crashing the beer for 24-48 hours as close to 4c if possible. Following this cold crash you can package your beer, ideally into a keg.

Notes: Instructions:
1.) Mash at 154 degrees for 45 mins
2.) Sparge the grains until you have 6 gallons of wort
3.) Start the boil (total boil time is 70 minutes)
4.) Right when the wort begins to boil, add the Simcoe hops.
5.) 10 minutes into the boil, add 1 lb of lactose
6.) Allow to boil for the remaining 60 minutes
7.) Reduce the temperature to around 180 degrees and add the whirlpool hop additions & 1 vanilla bean. Whirlpool for 15-20 minutes
8.) Chill the wort to 65-70 degrees
9.) Transfer to fermenter and pitch the yeast
10.) After 1 day, add 1 oz Citra and 1 oz Mosaic
11.) After 2 more days (3 days total fermentation) add another 1 oz Citra and 1 oz Mosaic
12.) After the yeast drops, add the remaining 2 oz of Citra and 2 oz Mosaic as well as the remaining vanilla bean.
13.) Let ferment for at least 14 days total |

Notes: Step 1:Mix honey in 4.2 gallons of water no hotter then 104f use spring water, mix until fully mixed.
Step 2: Measure starting gravity.
Step 3: Can start a yeast starter or use yeast dry on top of must.
Step 4: USE TOSNA protocol "if you don't know this you don't need to be making mead."
Step 5: Degas one time a day until 5 to 7 days in or last sugar break,
Step 6: ferment until 1.000 and rack to secondary.
Step 7: add 2.68 grams of Potassium Sorbate and 2.5 grams of potassium metabisulfite
Step 8: back sweeten with half a pound of honey and 1 pound of lactose.
Step 9: add 2 cans of orange juice concentrate, and the zest of 5 oranges. Also add 5 vanilla beans scraped out, place zest and beans in hop bag.
Step 10: tasted and add more honey as needed. Let age another week and make acid and other flavor adjustments as needed.
Note: this is intended to be carbonated at 2.5 volumes.
