racked to secondary for 21 days at 65. racked onto frozen watermelon slurry (forgot to let it thaw)
cold crashed for 2 days, then kegged.
this is an awesome beer, the Huell Melon hops are perfect. not sweet, easy drinking. Very sessionable. enjoy! |

3/3/24 Batch #33 - Attempt at peanut butter chocolate stout for the girls
Used 1lb PB2 in 28oz vodka to make slurry that sat for 2 weeks. Need to crush cocoa nibs and put in vodka for 24 hours. Should put in after PB2 settles maybe a day later. |

Notes: 1. Add the honey to the sanitised fermenter.
2. Add warm water (about 30C) to the fermenter and mix.
3. Pour the coriander seeds and yeast nutrients into a container and add almost boiling water (80C) to sterilise, dissolve and extract flavour. Add to fermenter.
4. Add orange juice to fermenter.
5. Add mead yeast and mix again.
6. Store in warm room (mine is 25-30C consistently).
7. Add a campden tablet to halt fermentation at appropriate sweetness. (I went for 1.015 as I didn't want it too dry - leaving an abv of 5%)
8. Age 2 months before bottling for low-medium carbonation or no carbonation if you wish as is traditional. |

Premium Light American Lager Holy Light was brewed in the tradition of some of the great American lagers. It was brewed with a slightly undermodified Moravian Pilsner Malt, as well as corn and rice to help lighten the body and lend a crisp and refreshing finish. It was lightly hopped with Willamette throughout and fermented with one of our favorite lager strains. Holy Light then went through a long, cold conditioning before packaging. Read Less

Knockout at 45° F (7° C), oxygenate and pitch, let free rise to 50° F (10° C), and hold at that temperature for fermentation. Once 8 points from final gravity, let free rise to 60° F (16° C) for a diacetyl rest and hold for 7 days. Slowly cool, no more than 5° F (2.8° C) per day, to 32° F (0° C), hold for 2 days once temp is reached, then keg.

Notes: Friday 9th September 2016 - 1.8L yeast starter put on stir plate
Sunday 11th September - Mashed in 64C. Raised temp after 45 mins slowly to 75C. Total mash time 75 mins. Final mash pH = 5.37 (adjusted with 1.5mL 80% lactic acid). Sparged with approx 3L 50C water to rinse the bag. Preboil SG = 1.051.
OG = 1.052. pH = 5.28.
Yeast pitched at 22C and temp controlled fridge set to 20C. Signs of fermentation less than 10 hours later.
Thurs 22nd Sept 2016 - CO2 transfer to DH keg with 60g Nelson / 56g El Dorado / 50g Simcoe. Approx 9g/L. FG = 1.010. 5.5% ABV.
Sunday 25th Sept 2016 - Started to crash the DH keg in the keezer.
Monday 26th Sept 2016 - Keg to keg transfer from DH to serving keg.
