Notes: Steep specialty grains for 30 minutes at 150-160 degrees. Remove grains, stir in liquid & dry extract and bring to a rolling boil. After your pot is at a rolling boil, add 1oz of CTZ and start a timer counting down from 60 minutes. With 1 minute remaining add 1oz of Chinook. Cool down the wort to 70 degrees and take a reading with your hydrometer. (Write that number down) It should be around 1.065. Sprinkle the yeast over the wort, seal the fermenter and airlock. After about 7 Days, transfer to the secondary fermenter and add 1oz of Simcoe. Wait 3 days and take a hydrometer reading and if it is about 1.015 you are ready to bottle. |

ok the brew came out bad. under attenuated. 1.040. i let it go 4 1/2 days before cold crashing. not sure what happened. here are some factors that could be fixed :
* possible underpitch - used a jar of hornindal that was made from a big starter and split 3 ways. next time maybe add whole pouch?
* possible yeast strain stubbornness - i think chad ritter said hornindal is a pain in the ass. next time switch back to hothead or try another strain
* possible lack of nutrients - ive heard some kviek need nutrients to do the job, but that wasnt the case with hothead
* possibly need to feed in the fermentables. added sugar andhoney to the boil - maybe next time add them a day or two later, possibly with some DME
* possible efficiency and mash problem - low pH readings but need to fix meter. low efficiency for sure. need to boil longer. maybe mash longer. maybe not getting full conversion andor proper formation of short/long chains
* possible grain crush issue
* possible water chemistry issue - need to re-evaluate
I'm also reading now that hornindal can under attenuate if you dont under pitch. use 1 tsp per 5 gallons. and need to use yeast nutrient.

having some kind of serious mash problem. only 50 some % efficient. pH coming out way low - read under 4.6 yesterday. not sure if pH meter needs recalibration or broken but its measuring 7.5 - 6.75 on RO water.
also there is something kind of strange about the water calculator. its possible it had me entering the salts for the full volume of water and not just the mash, thereby going too acidic. next time consider just treating all 10 gallons of water, not just the 8 that fit in the HLT.

brew day.
fine tuning the water. since we need almost 10 gallons water, i am changing the calculator to treat 8 gallons water (all that will fit in my digiboil), we will use 6.7 gallons for the mash as instructed. There will be 1.3 of gallons of treated water remaining, will then top that up with about 1.7 gallons of straight up RO water and use that 3 total gallons for sparge water.

Notes: This is stupid easy.(no boil) . you just need a 2.5 gallon fermenter. I used Costco (TM) apple cider, they do not use a preservative. You can buy the apple juice in 2 packs. Dump half a gallon into the fermenter ... then add a pound of sugar to the remaining 1/2 gallon.. shake to dissolve, put that into the fermenter. (every pound of sugar you add is about 2.7% abv, adding more sugar is fun, but not necessary). As you add the 2ed gallon, pout half in the fermentor, and shake to entrain some air to make the yeast work better.
There is no foam in the fermenting. I kegged after 2 weeks in the fermenter, had the keg sit for 2 weeks then tapped.. I am told the longer you let it sit the better, but it was very good... poured over ice is acceptable. |

Notes: Brett trial, June 4, 2016:
Heat mash water 4 gallons to 130*; Rest in mash tun for 30 mins (campden tablet added). Empty mash tun to kettle. 4 gals..bring to 150 degrees. Transfer to mash tun, add grain, stir ~ 2 minutes, temp at ~ 142 degrees. 35 minutes. Then add 1.5 gal water at boiling temp ~ 212, mix, temp at ~ 156+ degrees. Seal for ~35 minutes. Temp prior to sparge 155. Sparge with 3 - 1 gallons increments at 170 degrees to kettle.
Note: begin to drain towards grain bed before starting to adding sparge water or inserting paddle. After adding 1 gallon, gently prise grain bed, repeat until all sparge water added. Drain completely.
Total volume after sparge ~ 6.25 gallons. Start boil and add hops at recipe times. Remove from heat. cold break to ~70 degrees. OG - 1.064. (75% efficiency) 5.5 gallons. Divide into two fermentations:
2 gallon with Brett alone
3.5 gallon with Ale.
Pitch yeast.
3.5 gallon: Primary fermentation for ~5 days pitch Brett to 3.5 fermenter after racking (SG-1.006; abv 7.7%)
Secondary fermentation with Brett ~ 2 months
8/20/2016: SG on 2 gallon All Brett - 1.016. Back into fermentation. Tasting notes: drawn, nice Brett flavor, drinks very nice.
The Ale/Brett had a FG of 1.005. Bottled. Tasting notes: Not as high a total Brett flavor as the All-Brett but very nice as well.
11/4: cracked an Ale/Brett. Solid recipe. nice brett nose and aroma. Carbonation is ideal which produces a nice clear, clean body with a nice dry finish. Great example of how to do it right.
11/4: cracked an All Brett. SG = 1.010. Carbonation is still short of ideal. Try again in 2 months. Tasting notes: solid sharp brett character. Great nose with clear brett funk. Much more pronounced than the ale/brett. Nice body, clean finish. Very smooth. With carbonation, this could be entered.
