Notes: - Rinse rice.
- Bring 3 gallons of distilled water to a boil in the kettle. Using the steel mesh basket, add all the rice to the boil and reduce heat to a simmer. Cover and cook the rice for 30 minutes (or longer, if necessary). After rice is cooked, remove the basket and top off water to reach 6.72 gallons. Heat/cool as required to reach a mash temp of 147°F. Remember to factor the cooked rice temperature when calculating a strike temperature!
- Check pH before adding lactic acid, I'm not sure how the cooked rice water will affect pH.
- BOIL FOR ONLY 30 MINUTES!!!
- Pressure ferment at 68°F @ 15psi.

| Notes: Three temperature profiles that seem to be popular among homebrewers are just off boil range 190–212 °F (88–100 °C), the sub-isomerization range 160–170 °F (71–77 °C), and a tepid hop stand range 140–150 °F (60–66 °C). The 190–212 °F (88–100 °C) range will allow essential oils with higher flashpoints an easier time to solubulize into the wort and also will allow some alpha acid isomerization to occur with the best estimates of between 5–15% utilization. Some homebrewers will keep their kettle burner on low to keep the temperature of the wort elevated above 200 °F (93 °C) during their extended hop stands which would better emulate the conditions in commercial whirlpools. A hop stand in the 160–170 °F (71–77 °C) range will basically shut down the alpha acid isomerization reaction and the lower temperatures will reduce the vaporization of the essential oils. Homebrewers can use their wort chillers to bring the wort down to this range before adding the knockout hops or they can add a second dose of knockout hops. The 140–150 °F (60–66 °C) range will once again reduce vaporization of the low flashpoint oils, but may take longer to get the same amount of essential oils extracted. |

Notes: If you like whiskey, bourbon etc., this strong ale is for you. I typically throw in a few spare hops for Anesthetic purposes, but not for flavor since I'm replicating whiskey. When done correctly, this beer is phenomenal.
This software assumes you are using brewers malt. Distillers malt is different: it is 45 PPG with very high Diastatic power (220). Should get 1.1 OG and 1.05-1015 FG for a very dry strong beer. ABV should be 10.50%. Make sure you use a yeast calculator so that there is Enough volume and add plenty of O2 and nutrients.
Upon completion of fermentation, freeze and drain off remaining alcohol and beer. Should be around 12 to 18% ABV. A 2nd freeze will increase the ABV depending on the cold temp of your fridge/freezer. You should end up with 20-30% of original volume.
