** Kulmbach method for mashing:
Mash in at 122 F.
Rest 1 hour.
Using boiling water, raise temp to 129-133 F. and rest held 30 minutes.
Raise temp to 160-162.5 and hold for 90 minutes.
Then remove about 80% of the mash into another vessel and boil all hops in remaining mash
for about 10-12 minutes, after which this is added to the majority of the mash tun.
After that, the whole content is boiled and then heat turned off for mash out.
Rest for 90 minutes, then filter out hops and malt grains.
Add content to fermenter and place in ice bath, and pitch yeast once the temp reaches 48 F.
Ferment with primary in bathtub, changing water to keep cold, twice per day.
If you have a beer fridge, set temp at 49 F and leave for at least 25 days.
Use 2.3 to 2.4 atmospheres for bottling sugar, we described in the recipe details.
Lager at 33 F for 90-180 days. |

Notes: Brewed 11/4/16. Strike was about 170F and I hit 155F. Cooled with 2 cups of water and about 1gal of re-circulation.This brought it down to 151F after about 10min. Sparge went pretty well and I collected about 8.75gal(probably a little less), and cut it at about 2brix. The boil off of the first gal of wort went well. I believe I got about 3 cups form the gallon. Brew kettle efficiency was 76% but that was without the gallon of first runnings. I think I collected about 5.75gal but it might have been slighlty shy but it's above the sticker. Overall the brewhouse efficiency was good which probably was form the extra sparge and maybe the higher mash pH. Pitching temp stabilized at about 64F. 11/5/16 temp drifted up to 67F over the day and was cooled by to 64F by evening time. 11/6/16 beer was sitting at about 69F by morning (little high but probably fine) so cooled it down and by evening it was at about 65F. 11/7/16 the fermentation has slowed down substantially (e.g. no more krausen) and temp is sitting at about 67F. Biofined and gravity sample on 11/28/16. |

Upon first tasting, too bitter. Filtering left a real clean bitterness and cut some of the raw bitterness out of the beer. Reduce early hop additions. 1/2oz FWH would be just fine it seems.I
great aroma, color is a little light and body is lacking complexity. Add some Munich or honey malt.
Phenomenal beer over all, one of my favorites so far!
08JAN15: Malt bill and hop schedule revised to suit the previous statements. Munich 20L, Melanoidan, Carafa II and Chocolate added (1.5LBs, 1LB, .25, and 1 ounces respectively) First wort hop down to .5 ounce citra. 15 minute additions taken to 10 minutes.
BattleStations Lavender IPA Sesh V2
.5 Munich 10L and 1.5lb of honey added along with .35 ounces lavender at f/o. Tincture made 1 pint vodka with 2 ounces lemon peel, 1 oz tangerine peel.
Dry hopped with 1.5 oz cascade and 1.5 oz centennial for 7 days
