Notes: Devils Backbone Brewing Co.’s Vienna Lager clone
(5 gallons/19 L, all-grain)
OG = 1.050 FG = 1.011
IBU = 18 SRM = 10 ABV = 5.1%
The gold standard for Vienna lagers in North America, known for its smooth, malty finish and drinkability. This beer from Devils Backbone (Roseland, Virginia) has won gold at the Great American Beer Festival three times since 2012, plus numerous other accolades.
Ingredients
4.1 lbs. (1.9 kg) Pilsner malt
4.1 lbs. (1.9 kg) Vienna malt
1.25 lbs. (0.57 kg) dark Munich malt
1.25 lbs. (0.57 kg) Weyermann Caraamber® malt (26 °L)
3.75 AAU German Northern Brewer hops (60 min.) (0.5 oz./14 g at 7.5% alpha acids)
1.75 AAU Czech Saaz hops (20 min.) (0.5 oz./14g at 3.5% alpha acids)
Imperial L17 (Harvest) or Omega Yeast OLY-114 (Bayern Lager) or Mangrove Jack’s M76 (Bavarian Lager) yeast
3⁄4 cup corn sugar (if priming)
Step by Step
With a loose 3-to-1 water-to-grist ratio (~1.5 qts./lb.), conduct a protein rest at 125 °F (52 °C), holding for 30 minutes. Raise temperature to 147 °F (64 °C) and hold for 30 minutes for beta amylase rest. Raise temperature to 162 °F (72 °C) for 30 more minutes to convert alpha amylase. Mash out for ten minutes at 170 °F (77 °C). Recirculate until clear, then sparge until you collect about 7 gallons (26.5 L) of wort. Boil for 90 minutes, adding hops as indicated. If you choose to add clarifiers such as Whirlfloc or Irish moss, do so with 15 minutes remaining in the boil.
Chill to 52 °F (11 °C) then pitch ample amount of healthy yeast. Oxygenate thoroughly. Allow temperatures to rise to 54–54.5 °F (12 °C) during the main fermentation period. When fermentation is about two-thirds complete, raise temperatures to 56 °F (13 °C) to finish fermenting remaining sugars. At end of fermentation, let rise to 57 °F (14 °C) for diacetyl rest. Seven to 10 days after pitching. Start cooling 2 °F (1 °C) per day until you reach a temperature between 42–44 °F (6–7 °C). Rack off the yeast and transfer to a secondary for aging. Crash cool to lagering temperatures between 28–34 °F (-2 °C to 1 °C). Lager for a minimum of two weeks, but the beer will benefit from a lagering period of four weeks or more. Force carbonate to 2.5 volumes or prime and bottle condition. |

YEAST
Add yeast nutrient at 10 minutes
Omega Yeast Labs OYL-011 (Wyeast 1318 London Ale III), 2.25 qt (2.14 l) starter, ferment at 70°F (21°C)
Target Water Profile
Use gypsum and calcium chloride to adjust to 125–150 ppm calcium, 165–175 ppm chloride, and 85–95 ppm sulfate for a finished SO4/Cl ratio of about 0.5. Use lactic acid (88% strength) to adjust water pH—we adjust both the mash water and sparge water separately (based on the volume of each). If you don’t have the capability to adjust mash and sparge water separately, make all of the mineral/acid additions based on your mash water volume. Always use de-chlorinated water.
Directions
Mash at 154°F (68°C) for 30–45 minutes (or until conversion is complete), target 5.3 pH. Sparge with 170°F (77°C) water and collect at least 7.25 gallons (27.4 l) of wort. Boil for 90 minutes following the hops schedule. At knockout, use a large stirrer and create a whirlpool to cool the wort for a few minutes. The closer you can get to 180°F (82°C) the better, but anything under 200°F (93°C) will work.
Add the whirlpool hops and let rest 10 minutes, then whirlpool again for a few minutes to create a nice compact trub/hops pile. Collect at least 5.05 gallons (19.1 l) of wort. Depending on your efficiency, feel free to collect some extra wort to offset loss due to dry hopping. Chill the wort to 70°F (21°C) and oxygenate. Between 1.020 and 1.024 (5–6°P), add the first dry hops to the actively fermenting beer. At 1.017 (1°P from FG), add the second dry hops.
Three to seven days after reaching FG, crash and rack off of the hops. Carbonate to 2.55 volumes CO2.

Notes: Notes on Whirlpool taken from http://www.homebrewtalk.com/showpost.php?p=3565328&postcount=45
Alright, so now that they're carbed up and conditioned the side by side test was done today. I also had my friend taste them without knowing which one was which.
The recipe, it's pretty out of season.
10# pilsner
8# gambrinus "esb" malt
1# carafoam
.5# honey malt
mash @ 154
90 minute boil
.8oz magnum @12.5%
When it was chilling time i split the beer into 2 pots and added .7oz saphir to each, immediately chilling the first 5 gallons and letting the other 5 sit there while the first batch chilled. Each bucket received a re-hydrated pack of S-05. The OG was 1.042 and I didn't measure the FG.
The verdict? Steeping the hops for 20 or so minutes before chilling will get more aroma and flavor out of them. All the hops were pellets.
The one that was chilled instantly doesn't really have any hop qualities at all, maybe a tiny "green" or "plant" flavor if you search for it. Pretty much a waste of hops, it mostly has a mild candy-like sweetness with a bit of malt flavor, but overall it's quite a low-flavor chuggable beer. I'd probably like it more if it was hot outside.
The one that was steeped has a modest, bright hop essence that mixes nicely with that sweetness. You can actually smell a bit of hops in it and taste them too. It's still a real mild, chuggable low-flavor beer, but there's more going on than in the other one. I think the steeped beer has a teensy bit more bitterness, but I couldn't tell until i re-tasted them to see what the difference was.
So there we go! I'm excited to find out how much more intense my hoppy brews are going to start getting pretty soon here.
