Notes: Targeting a batch size of 11l to allow room for adding plums in the fermenter when fermentation is slowing down.
I ran out of Pilsner, otherwise it would be all Pilsner malt
I will prepare a massive yeast cake by brewing a low ABV beer beforehand and I will rack the wort directly on to it to avoid having to make a starter for such a big beer.
The light chocolate malt is mainly to adjust for colour if you like it a bit darker. I doubt it adds much flavour at 50g but you never know. |

Notes: This version is scaled down to 5 gallons and down from 73% efficiency to 60. Malt and hop additions were adjusted slightly to make for more round numbers. This calculator has the beer finishing a couple points higher than the posted recipe. Added a little more honey to put it at 6.3% abv.

Notes: This originally was designed to be a double IPA but my efficiency was lower than expected.
Ended up dry hopping with Columbus for a week. Then took out the bag a couple of days before bottling.
MJ42 gave it a very clear finish, this yeast will eat through your bucket. |

Notes: Heat 5gal RO water and dissolve 5 lb dextrose
Bring to boil for 5-10 minutes
While boiling, re-hydrate yeast Go-Ferm (1.25g GoFerm/1g yeast)
Cool sugar solution to ~ 65F and pitch yeast
Add 1.2 g/gal fermaid K at 24 hours, 48 hours, 72 hours, and 7 days after pitching yeast
