Notes: Mash at 158 for 30 minutes. Recirculate mash for 10 minutes then sparge.
Boil for 90 mins, with first hops in at 60. Cool to 67 then aerate for 2 minutes. Let fermentation temp rise to 72 after 5 days.
Cold crash and carbonate to 2.2.
Can add 2-3 oz of Fuggles at Day 5 and leave in for 2-4 days.
Gold Medal in 2022 NHA for Pale British Beer, 9B.
First brewed 9/18/22. Pre boils gravity was 1048 and post boil 1055! So 80% efficiency. Boiled 90 mins and had 5.1 gallons remaining so added .4 gallons distilled water to get to 5.5 gallons.
Used hop spider which retained some liquid with 6.5 oz of hops! That brought gravity down to 1050.
After 24 hours gravity was 1028 with temp at a constant 67f.
Second brew 3/31/24.
Followed schedule, inc. 1 tsp of gypsum and 1 tbsp of 10% phosphoric acid. Measured pH during boil and it was 4.8 pre sparge, and 4.88 post sparge. Added 1/2 tsp chalk just before boil to try and increase it.
Gravity at the start of boil was 1044. Boiled for close to 2 hours by mistake. As a result, had to add 3 pints of distilled water to bring the quantity close to 5.5 gallons.
Chilled to 67 then moved to fermenter. Gravity was 1054, so higher than planned (79% efficiency vs. 73% before). Added yeast and just used an airlock - no temp control.
Temp rose to 71 after 24 hours and gravity fell quickly to 1034. After 64 hours it was 1024. Gravity then stopped at 1023 and remained there for 3 days. I shook the fermenter to stir the yeast but no change. I then added a pack of rehydrated US05 to try and lower gravity but no difference.
Put into cask after 13 days of primary. FG was 1023, so poor attenuation but likely due to high mash temp. Amazing clarity as it transferred and taste was distinctive - toffee, gentle rolling bitterness, toast, and soft spices. Very drinkable from the fermenter!

Finalize water profile with Gypsum, Calcium Chloride, and Chalk, split between mash and boil, to take city water to desired water profile (Ca: 66; Mg: 30; Na: 48; S04: 56; Cl: 72; HCO3: 112).
Mash at 152° F for 90 minutes. Raise mash to 168° F and sparge out.
Fermentation:
Start cool at about 50°F, and hold there for the first forty-eight hours. For every day thereafter, increase your temperature by 1°F for ten days. After it’s been in the fermentor for twelve days, it should be at a steady 60°F. Activity in the airlock should be low (but not absent). Raise to 65'F for diacetyl cleanup for 3 days. After fermentation is complete (estimate 3 weeks) cold-crash to begin the clearing process.
Bottle conditioning:
Raise the temperature after bottling back to room temperature to encourage appropriate bottle fermentation, then place it in a dark, cold corner for at least six weeks.
Carb at 2.4 vols and let sit for another 4+ weeks to lager. |

- Expecting mash efficiency of 76% which implies a pre boil gravity of 1.049
- Initial PH was 6.0 (didn't add any lactic acid at outset of mash), added 3ml of lactic acid and second reading was 5.8, added 3 more ml of lactic acid and reading was 5.7, added 2 more ml of lactic acid and final reading was 5.6. Not sure why PH drops minimally with lactic acid additions. Might need to re-calibrate PH meter. **Update. Think my issue was not mixing the lactic acid with the water prior to doughing in.
- Mash temp settled at ~152F
- Hit 12.7 plato pre boil gravity which converts to 1.051 vs. 1.049 target so 79% mash efficiency vs. 76% expected
- Original gravity reading was 15.5 plato which converts to 1.063 vs. 1.066 expected.
- After boil had ~X.XX? gallons in the kettle and ~5.75 gallons made it into the fermenter
- Pitched 1 smack pack of wyeast 1335; started fermentation at 65F.
- Still some very small airlock activity 2 weeks later! Starting to do a small cold crash to stop fermentation so I can package and see where attenuation ended up. Might need to adjust pitch rate for next batch to speed up fermentation process.
- Packaged on 9/29/18, FG reading was 1.015 vs. 1.016 expected so 76% vs. 75% expected attenuation

Notes: Bring yeast starter to targeted pitching temperature, 50 °F .
After reaching target pitching temperature, add yeast starter, shake the fermenter to aerate for four minutes, and set the carboy in 50 °F keezer.
Ferment at 50 for two weeks.
Bring temperature to 62 degrees for two days for diacetyl rest. Rack to carboy.
Drop the temp 5 degrees per day until lagering temp of 40 degrees reached. leave for 2 weeks. Move to keg and leave for an additional 3-4 weeks. |
