brew came out....ok. kind of some kind of off flavor idk if coming from the fermented blueberry. maple in the keg was way too sweet at first but pretty balanced now. at one point i took the keg out into the garage floor for a week or two and i think some of it fermented away. also i wonder if the maple just sat at the bottom for the most part being that it went in cold and th ebeer was cold.
not sure what to do next time tbh. not sure if blueberry and stout really mix together well ever or if there is some cleaner way to do it.

brew night last night went well. ended up doing one standard batch of pancakes from bisquick, used water and mix (i.e. no milk, eggs, or oil) which was two cups of mix, turned out to be about 11 healthy sized pancakes. drizzled some maple syrup for effect before tossing in the mash.
i ran out of 2row so supplemented with a little pilsner.
i did not have london on hand. subbed in mangrove jack liberty bell (says good for english and american) plus another pack of us05.
hit OG and volume pretty much spot on. 90 minute mash and 3 hour boil.
will plan to add some blueberries in a couple days. the 16oz maple syrup i will plan to add to the keg when i rack it.

repurposing snow delay into this pancake stout. also have the mona lisa based version available but i have the ingredients for this right now. will be light on srm but who cares.
suggesting 16 oz maple syrup to cold crashed beer at kegging time. will keep cold. could maybe want to taste at this time and add more if needed. will it mix?
pancakes will be cooked regular from mix and added to mash.
blueberries will get frozen from store and thaw and puree at home.

Update 1/1/19 : changed grain bill slightly as I only had 9.25 lb 2 row on hand , will make up for it with dme. Also just realized I've probably been using too little water. Usually 1:1. Using more water this time. Recommended 1.25 to 1.5 so I'm in with 1.34. Hopefully I can fit that...
update 12/7/18 : modified original "rain delay" recipe for this one, adding oats for body and more malt to boost up to hopefully around 8%. should be noted that rain delay came out more like a stout than a porter. now we will officially call it stout.
bumping up hop additions to better match the malt bill changes. swapping out for warrior on bittering hops so i dont end up with leftover northern brewer. could age some on bourbon oak.

Step by Step
Mill the grains, then mix with 5.1 gallons (19.2 L) of hot strike water to achieve a single infusion rest temperature of 155 °F (68 °C). Adjust mash pH to 5.3–5.4 using lactic acid, if needed. Hold at this temperature for 60 minutes. Mashout to 170 °F (77 °C) if desired.
Vorlauf until your runnings are clear before directing them to your boil kettle. Batch or fly sparge the mash and run-off to obtain 6.5 gallons (25 L) of wort. Boil for 60 minutes. Add the Warrior® **incrementally from 60–30 minutes**, then add the Simcoe® incrementally from 30–15 minutes, and finally, add Palisade® incrementally from 15 minutes to the end of the boil. Also, at 15 minutes left in boil, you may want to add either Irish moss or Whirlfloc as fining agents. At 10 minutes left, add the corn sugar.
After the boil, add the flameout hops indicated and whirlpool for 10 minutes before rapidly chilling the wort to 63 °F (17 °C). Oxygenate with pure oxygen and pitch a healthy count of yeast. Allow the beer to free-rise to 68 °F (20 °C).
Once primary fermentation is complete, dry hop with all three varieties. After 3 days, drop the temperature to 55 °F (13 °C) and after 24 hours, rack the beer to secondary. If oaking, add it now (1.1 oz./30 g of medium-toast American oak) and age for 14 days. Bottle or keg the beer and carbonate to approximately 2.5 volumes. |

Notes: Belgian Trippel Delirium Tremens clone
No added sugar - using 2 lbs of pale 2 row instead to give it some all grain character.
Going to ferment in a ~ 65 degree basement and let it reach natural temp ~ 70-75
Add the 2lbs to brew bag, drop in at ~ 100 degrees, slowly ramp up to 153 to mimic some of the rests. Hold at 153-155 for 20 minutes.
Then stir while adding LME and raise to boil.
Starter yeast with some DME either day before or early morning. Boil 1 tsp bread yeast as nutrient.
Camden tablet at the start, irish moss at 10 minutes.
Oxygenate cooled wort with oxygen stone or agitation.
Will give 2 weeks in primary to fully ferment. May rack to secondary for clearing/aging. May just leave in primary for a month.

I did 4.25 gallons for an OG .034/6
FG came in at .010 after 9 days no secondary.
4/4/15 - Mashed for 75 mins 152-54, iodine test, 1 teaspoon Gypsum, mash out to 162, OG came in at .37 pitched at 70 degrees
4/14 - FG at .011 3.4%
6/16/15 - Mash between 156 to 149 mashed out with 190 tea kettle degree to 153 then poured 175 degrees over the grain bag that was out of the pot after. OG .036 4/12 gals, pitched at 66
6/26 - FG .008 for 3.68%. tastes great into keg
1/30/16 - Mashed 152-52 mashout 160. Sparged with kettle water 175. OG .038 no wirflock tab haha.
2/10 - FG .014!? 3.15% meh. I should keep better notes OG was good same yeast maybe longer mash time?
9/7/16 - mashed between 155 to 150 whirfloc, Est Kent Goldings, .75 biol. .25 at 5 mins, OG .034 danstar windsor at 68 degrees
9/15 - FG .008 for 3.41% tastes smoother and less hopped with the Windor yeast and Goldings.

Notes: 4 gal distilled water at room temp
Heat 1 gal distilled water and dissolve gypsum and cal chloride
Mix all 5 gal together. Add 88% lactic acid and lemon juice and 1 tsp of Brewer's yeast. Invert keg a couple of times and add hops. Force carb.
