Specifics:
Ferment at 66 and raise temp to 72 on 4th day. On day 6, rack to secondary and dry hop. Let sit on dry hops at 70 degrees for 3 days. Cold crash to 32 degrees on day 4 and add silicic acid (sold as Biotin Clear) on day 5 and let sit for 2 days.
Hops: Rakau is suggested instead of experimental J-17. Also can use Galaxy, Waimea, Riwaka or Dr. Rudi. |

1 oz (28 g) Tettnang [3.8%] at 15 minutes (more flavor, low aroma)
YEAST:
Wyeast 2565 Kölsch or White Labs WLP029 German Ale/Kölsch
Instructions:
Single-step infusion mash at 147°F (64°C). To avoid oversparging, use a thinner mash (around 3.75 gallons/14 liters of water) and adjust the sparge water accordingly.
Boil for 60 minutes, following the hops schedule.
Chill the wort to 65°F (18°C), pitch the yeast, and place the wort in a 60°F (15°C) fermentation chamber for 5–7 days. Raise the temperature to at 65°F (18°C) for 1 day for a diacetyl rest. Rack the beer and age at 35°F (2°C) for 21–30 days, then keg or bottle. |

Har nå stått på flaske i ca 3 uker og dette ble skikkelig bra!
Rund fin smak, ikke for bitter, fin amber farge, masse bra aroma og balansert humlesmak.
Oppskrifta er basert på Bakke Brygg sin HveteIPA. Vi tok feil Crystalmalt og gikk for 400 mørk i stedet for 60, så ølet er vesentlig mørkere enn hva Bakke hadde tenkt. Oppskriften her er også et forsøk på å gjenskape et brygg der mye av bitterhumla kokte over og havna på gulvet like etter tilsetting. Foreløpig er vi godt fornøyde med resultatet og venter spent på hva som skjer med ytterligere lagring.
