Notes: For Frozen Raspberries & Blueberries: puree in a blender or food processer and then use a fine wire mesh strainer to separate the seeds/skins from the liquid puree. Discard the seeds/skins that are captured in the strainer. Add 1/2 cup vodka to the liquid puree and store in fridge.
For the 14 oz. "Cane" sugar (actually used 2 - 7 oz. cones of Piloncillo & added 2 cups of water to make a syrup. Boiled for 5 minutes to sanitize. Also store in fridge.
Add the berry mixture and the sugar syrup directly to the fermenter just after high krausen. Approx day 3 to 6.

Will collect extra and boil off the extra before starting the 60min boil and hop additions.
Recirculate for 15+ minutes to get sparge water back up to 76C before fly sparge. zero loss of temp while recirculate back up to 76 :) |

Notes: Made a yeast started from puffed out Wyeast packet. Added the small amount of Citrus hops for the boil as I discovered the Hallertau hops had a very low IBU when I started to brew. Experimenting with the honey at the end of the boil - from our 2024 fall hive harvest. feremny temp is 70-71 deg (basement). |

Notes: This was a recipe from Evan McFarden but I am modifying it. Ferment primary for 7 days or until gravity is at desired FG. Rack beer into secondary directly on the frozen fruit. Sanitize fruit bags before adding and leave fruit whole (no crushing or blending) for sanitation.
Leave in secondary for 1-2 weeks then keg.
His recipe called for White Labs London Ale Yeast WLP013. I am going with SafAle/Fermentis US-04. I am also not adding any water agent. His recipe used 134 grams of Citra Hops at 11% AA and 170 grams of Mosaic at 12.5% AA. Total Hops 304 grams and 67.4 IBU. I have 99 grams of Citra hops at different AA and no Mosaic. Notes: Mäskäyslämpötila tipahti alussa 61-asteiseksi, nousi 10-15 min kuluessa 65-66 ja pysytteli siinä loppuajan.
Mäskiin pari grammaa kalsiumsulfaattia ja keittoon magnesiumsulfaattia.
Huuhteluveteen vähän merisuolaa ja pH noin 5.
Käymisen aloitus 15-asteisena ilman painetta. 17-asteiseen huoneeseen odottamaan, kunnes paine kasvaa 12psi ja vähitellen nostaa lämpötilaa 20 asteeseen. 5-7 päivän päästä lämpötilan pudotus 12-15 asteeseen, siellä päivä, sitten jälkihumalointi 3 päivää, pakkaseen päiväksi, kegiin 2 päivää uudet jälkihumalat, jonka jälkeen siirto uuteen kegiin, jossa gelatiini pohjalla. |
