Notes: Pitched decanted starter of ~400B Cells. Pitched and fermented at 70* for 6 days then finished in 85* garage for a few days. Directly bottle conditioned from primary via valve and spring-loaded bottle filler.
Planning to add one packet of US-05 4-5 days into primary to combat this strain's tendency to stall. LHBS was out of French Saison which I would normally use for this purpose. |

Notes: Pitched two packs of yeast into 60* wort. Set keezer at 60* for the first four days then removed from keezer allowed to free rise to ambient 70* temp. Beer finished at 1.008. Good clarity and nice clean flavor when transferred to keg w/ dextrose. |

Notes: Bit of a learning curve w/ first-time BIAB. Hit all numbers and was 13.1P. Let wort chill in fermenter for about 6 hours before pitching. Aerated w/ whisk since I was out of oxygen and using dry yeast.

Notes: Re-Brew of a March 2020 batch that was EXCELLENT. Pale Chocolate is a "Jamil Z" trick to accentuate toast character and crisp finish in malty lagers. Using IO-Harvest yeast this time instead of WLP838. Pitched a partially decanted yeast starter made up of 2 month old IO-Harvest slurry from another German lager. Starter showed good signs of viability. |

Notes: Mashed In at 154* and recirculated w/ pump for 30 minutes. Stopped pump and direct-fired gently for 10 minutes. Recirculated wort for additional 50 minutes before re-routing outflow to boil kettle. Wort temp at end of mash was 148*
Simcolumbus is a 50/50 blend by weight of Simcoe and Columbus that averages to 15.0 AA%.
At flameout, left kettle uncovered 10 minutes, then whirlpooled and strained out as much of the hops matter as possible before chilling to hopstand temp and adding whirlpool hops. Goal was to let the 5 min hops sit longer. Split batch between two fermenters with one pack of Independence and Kveik for comparisons, Fermented at 68* ambient in house for 11 days while on vacation.
Keg'd on Day 12 with dextrose solution, a little roused yeast, and dry hops. Plan to keep the dry hops in keg for the duration. Dry hops = 1 oz in each keg. |

Notes: Mashed pilsner and wheat malt for 30 minutes at 150* before adding acidulated malt and lactic acid to the mash. After 75 min total mash, recirc'd as usual, filled kettle w/ 6 gal wort, raised wort to boil, skimmed precipitate, and rested 10 minutes to kill wild yeasts, then chilled to 95. Pitched lacto, purged kettle, sealed up lid w/ saran wrap. Kettle sat in hot 80*+ garage.
After 12 hours, warmed kettle gently a few minutes. After 36 hours, desired sourness was reached. Brought to boil, added salt, corainder and hops, boiled 5 minutes, then flamed-out and rested 10 minutes to kill the lacto yeast. Chilled to 70*. Racked to fermenter, oxygenated and pitched 2 packs US-05. Plan to directly keg after 10 days with bottling sugar and maybe a little yeast slurry.
Won 1st in the 4th Round of an Indiana Competition for German Beers, aka Der Hoosier Braumeister, in which home brewers and commercial brewers compete head to head.
Wonderful beer. Salt/Lemon Zest/Coriander in perfect balance for my taste. |

Notes: No Sparge Method used. After 10 minutes of the 162* rest, strained thick decoction mash into side kettle and brought to boil. Ensured main mash stayed at 162* after grain removal. This is an Export-Strength Helles like Augustiner Edelstoff. Seems to fair better in competition than previous batches at lower abv's. Delicious!

Notes: Best Pils & Barke Munich. At the end of the 154* rest, pulled decoction into small side kettle and heated it while also heating main mash to the 162* rest.
Added one tab NaMBS to mash water. This batch was a re-brew of an early Jan-2020 Maibock that was perfect at 90 days. Had a slight lingering bitterness at Day 61 when judged in Der Hoosier Braumeister Competition.
Current batch will be bottled around Day 82 and judged around Day 96 for IN Brewers Cup. Pitched clean slurry of yeast into 72 hour 2.5L starter, decanted before pitching. Fermenter took off by the following morning. |

Notes: Milled & conditioned grains immediately before mash-in. Pre-boil gravity, even at 9 gal, was 2B higher than predicted of 9.5, so I shortened planned boil time from 115 mins to 90 mins. Due to hops clogging the kettle screen, after the first 3 gallons drained clear to fermenter I had do pour the last 3 gallons from the kettle, so there's more trub in fermenter than I'd like. RDWHAHB. Hit OG target and fermenter was bubbling 12 hours later at 48* chamber temp. Pitched at 58* due to 56* ground water. |
