Notes: This is an attempt to recreate what I always imagined the frothing golden liquor that you see in Viking shows and movies to be. They call it "mead" but it looks like an ale of sorts, golden in color with some haze and a thick white head. It is clearly quaffable and moreish, unlike traditional mead, but is more indulgent and luxurious then an ale.
This is in no way intended to be historically accurate. This is simply a recreation of a drink as seen in my minds eye (or mouth in this case). |

5 Madagascar vanilla beans, split, scraped, and diced
3 large dried ancho chilies, split open, seeds removed, torn apart, included 1 tsp of reserved seeds
6 oz - Organic Raw Cacao Nibs, baked at 250 for 20 minutes (or until fragrant), allow to cool
All ingredients were added to tincture with vodka and stored at room temp for roughly 6 weeks, shaken occasionally.

Packaging:
A Keg, fitted with filter around dip tube, was dosed with tincture, solid ingredients were placed in fine mesh bag and thrown in keg. Finished stout was racked via fermentor spigot to keg through liquid out post; keg was then purged and allowed to age at room temp roughly 7 days. Beer was then racked to a serving keg via jumper between liquid posts; keg was purged and hooked up to gas in the kegerator ~10 psi for 7 further days.
Tasting 12/28/22
Appearance: Deep reddish brown, black from face on, the stout is pale on the edges. A thin ring of tight khaki foam hangs around for the whole experience; clinging to the glass as go
Aroma: Initial smoked pepper flavor, vanilla root beer float, earthy bittersweet chocolate, malt ball, I don't get vanilla face on but suspect it's supporting the other characters
Flavor: wow, an attack! Gentle smoke combines with roast on the front, gentle sweetness carries through with cocoa and vanilla on the swallow. Wow, finish is griping with gentle heat and vanilla cola. Very tasty.
Mouthfeel: medium minus; a memorable and quick experience on the palate
Overall: I'm really proud of this one! This is by far my most successful use of adjuncts, and most of them are in line with where I wanted them. I think this recipe would really shine with cinnamon, and I want to rebrew this just to include it. I think we could almost use more vanilla and I could stand more heat from the chilies actually. |

Notes: I`m primarily using Heather honey in my mead. At least 60/40 when I use a mix of Heather and Flower honey.
2 liter starter @1.04SG, 2 stage.
Filipendula ulmaria ( called Mead spice locally ) was traditionally used as "flavoring", and is this brews source of tannin. Caution; Filipendula ulmaria is a natural source of salicylic acid. Steep the Filipendula ulmaria in 1 liter of water so that it makes a strong, pungent tea. Add the tea to the fermentor the 3rd day.
Add commercially prepared Apple Must/ Apple Juice ( without preservatives like Potassium Sorbate, Ascorbic Acid is ok tho ) to the fermentor the 3rd day. The pectinase will help break down any pectin.
Leave to ferment for 30 days. Store for an additional year after botteling. Enjoy =)
End notes:
It was, to my best knowledge, uncommon to use hops in mead. Nor was it common to use any kind of malt. Hops, malt and Achillea millefolium ( a hops substitute, called Beer king locally ) was most commonly use for brewing beer ( beer was for every day use and mead for special occasions ).
You could add a small amount of clove, ginger and nutmeg to make the brew spiced as well ( I use these spices with restraint as I do not want my mead to taste like gingerbread ). Boil the spices for 15 minutes and let the Filipendula ulmaria flowers steep to make the tea.
Carbonation was also rare at best, and then only lightly ( due to lack of pressure proof containers ). |
