Notes: Used 'Triple-Single' Decoction. 45 min decoction boil may have been too long. Wort after boil was more golden than Pilsner Urquell but the finished beer was almost identical, but a slight touch more golden.
2nd out of 28 entries in the 2018 Indiana Brewers Cup. Was judged around Day 63. The beer was even better around Day 95... more rounded and the hops aromatics finally compete w/ the malt.

Note: 100% of the mash was direct-fired from 100* dough-in up through the 148* rest as noted. Then, about 75% of the thick mash was pulled for the noted decoction steps. Next time, I may reduce to 50% mash with a 30 minute boil. |

Notes: Ensured main mash was 156* before pulling decoction. Beer was perfect from Day 40-60 then really seemed to dry out in the keg. Will consider slightly decreasing time at 146* and increasing time at 156* with this grist. Perhaps shift 15 mins of the time to 156*
There was some room for more bitterness (as a few judges commented) but I think it is just about perfect. Normally use Magnum for bittering but I had some Liberty to use up this time.
Hershbrucker aromatics are great. Way better than Mittelfruh.

Notes: No NAMBS added. Adjusted mash schedule from previous batch to dry beer out more. Hoping the elimination of the slow-ramp from 146* to mashout temp will decrease the maltyness and make it more style-adherent. Previous batch was great but "had too much flavor" per a few judges.

Notes: 3L starter (10.8 oz DME) with 4 smack packs needed for 800+ Billion cells.
1st in category and overall Best of Show: 2018 Hammerdown Brew Cup (Cincinnati). Have opportunity to brew a 20 bbl batch at Braxton Brewing later in early 2019.
This beer was originally brewed to the "lighter side" of the doppelbock range, but it turned out to be a great, albeit ballsy, dunkelsbock. For future brews, I will probably shave a pound or so off the Vienna/Munich combo if brewed as dunklesbock. |

1.5L starter using a heaping cup of DME for 1.040 starter gravity.
2nd out of 27 entries in its category in the 2017 Indiana Brewers Cup. It beat out my American Lager in the same category by one place. The American Lager had won Silver at NHC Finals a few weeks earlier.

The key to making this great is getting the FG to 1.008. The NHC Final batch finished at 1.008 and was noticeably better with more "pop" than my 1st Round batch (FG 1.010). A 60 minute+ rest at 146 or so is key, in my opinion.
Hybrid of Coors Banquet & Budweiser. Both beers use approx 70:30 barley:adjunct
Coors: 70% 2-Row and 30% Corn
Bud: 70% 6-Row and 30% Rice
This beer uses approx 90:10 6-Row:Corn. Decreasing the adjunct keeps the beer w/i style guidelines but it still actually tastes like beer. Most of my macro-hating beer snob friends like this beer, FWIW.
The batch brewed for NHC 1st Round in early Jan-17 was a 6 gallon batch and used WLP 840. This batch split between WLP840 and WLP850. Submitted bottles of WLP 840 to NHC Finals. 850 made a Heineken-like lager... a perfectly decent beer but the 840-half was more to-style. WY2007 also works well for this beer, and WY2035 is great but only has seasonal availability. |

Mehetett volna bele 8 g/l cukor!
Hiba - Roppantott fekete maláta ment bele, nagyon barna jelleget kapott, szinte nem is Rubin. (Előzőleg mint kiderült ugyanennyi nem roppantott maláta ment bele, amit ott aprítógépeztünk meg kicsit)
Komlók jobbak, de így kevésbé is érezni a barnaság miatt. |

Notes: Boiled 1st Runnings 30 minutes while sparging the second runnings.
1.4M c/mL/P or 729B yeast cells. 3L yeast starter w/ 13oz DME. 8 hrs on stir plate. Starter then sat 3 days at 60*. Pitched decanted yeast.
FG:1.020. Primary Fermentation 27 Days around 60*. Then kegged and aged around 38* in keezer. Force C02 & bottle-gunned around month #6
3rd in 2017 Indiana Brewers Cup (July 2017). Plan to enter again in 2018 Indiana Brewers Cup. It also won another award in 2017 but I honestly cannot recall the competition. It's basically the "SCOTTIE MACROCKETTS" recipe from Great Fermentations store (Courtesy of Nathan Compton) except I used Golden Promise instead of Maris Otter.
Edit 5/29/18. Bottles have been cellared 13 months and they keep getting better. I try one bottle every 3-4 months. |

Notes: Mini-Rant: This is not an Anchor Steam clone. If a dead-on Anchor clone is submitted, judges will say the beer is under-hopped and not bready/toasty enough. I prefer Anchor's version (92:8 2-Row to Medium Crystal). This batch is a test of my theory that judges "expect" a Munich-driven malty lager, not a close approximation of Anchor Steam.
