Notes: Use London Ale yeast to produce English ale flavors, Use White Labs Super High Gravity Yeast to finish the process in case the ESB Yeast gets stuck as alcohol rises above 11%
I suspect that fermentation will take about two weeks before it can be racked to secondary and the oak chips added.
Make a yeast culture from the bottom of the primary fermenter for your next brew.
No sparge. Add enough water to bring the pre boil volume up to 7 gallons, should be about 2.5 gallons.
Make a lighter batch of ale from the remaining grain and some more DME. |

Notes: Kettle Souring
Bring your collected wort to a hard boil.
Boil for one minute then turn off heat.
Place brew pot in an ice bath until it cools to 100°F (38°C). Be careful not to splash or stir the wort. You want to avoid getting any oxygen in at this step.
Gently cut open your Lactobacillus tablet and shake the powder out into the wort.
Seal the top of the pot tightly with plastic wrap. Use tape to create a tight seal where the plastic wrap meets the pot. If you have a lid you can cover the pot and seal it with plastic wrap only.
Let the wort sit undisturbed at room temperature for 2-3 days.
Proceed with boil and fermentation
Added more lemon and salt after fermentation to taste (for preference)
Aiming for 3 vol CO2 (low for the style) |

Notes: El lúpulo Apollo es muy bueno para brindar un amargor suave. Se puede sustituir por Magnum, Bravo, u otro lúpulo de esta categoría.
El lúpulo Perle brinda sabores y aromas clásicos, puede reemplazarse por otro lúpulo noble como Saaz, Sterling, etc.
Los lúpulos Calypso y Kohatu son moderadamente frutales, y se pueden sustituir por otros lúpulos de esas características, preferiblemente de Nueva Zelanda como Motueka, Wai-iti, Waimea, pero también se puede experimentar con otros lúpulos modernos.
Si no se cuenta con esta levadura, se puede usar Safale BE-134, o cualquier otra cepa de levadura de estilo saison.

Notes: roasted cacao nibs at 250F for 20 min, soaked in vodka for 5 days before brewing - add to fermenter 1 day before kegging
as per other recipes, added 8oz cocoa powder at flameout, along with lactose, and whirlpooled briefly. The cocoa powder completely clogged the kettle screen, and the BIB pump was required to drain the kettle - afterwards a lot of thick chocolate syrup was left in the kettle and this was poured into the fermenter. |

This base beer great by itself but lends itself well to flavoring after fermentation.
Examples:
6 oz of Apple flavoring (1.5 bottles of Brewer's Best)
8 oz of Blueberry flavoring (2 bottles of Brewers best)
1 unsweetened packet of powdered lemonade for a shandy.

Notes: Started with 20L of water for steeping.
Lost approx 2L to the grain and 2L to the boil.
Fair bit of hop material which kept blocking the strainer on the pot.
Ended up with 15L in the fermenter (pre-pitch), way up at 1.090.
Required dilution with 9L of water to bring it down to the target 1.050.
Pitched yeast at 22.5C
FG was 1.010 giving an ABV of 5.25%
Batch primed with 122g brewers sugar and bottled at 18C
Taste is slightly earthy but with a citrus hit (sweet orange) and a hint of honey.
End of first week conditioning, carbonation is spot on for the style. Earthy flavour is more pronounced. Very clear beer. |
