WARNING: this recipe assumes that you have an oxygen system and are able to add sugars and oxygen to the beer during the first 5 days of fermentation.

Once primary fermentation starts, say 12-36 hours after pitching, do the following:
Feed sugars twice a day if possible (see schedule below).
Every time you feed, inject oxygen.
Sugar mix: in a sauce pan, mix 1/4 cup of water with maple syrup, brown sugar, table sugar and the yeast nutrient. Heat and stir till the sugar is mostly dissolved. Don't worry about cooling it off. Just dump it right in.
Feeding schedule:
(WARNING: in the Extra Ingredients section, the numbers were for 40 gallons. Since you will most likely be fermenting this in increments of 5 gallons, the numbers below are for a 5 gallon batch).
Day 1, 1: 1/4 lbs total of brown and table sugar, 1/2 maple syrup, 1/8 to 1/4 teaspoon of yeast nutrient. Oxygenate.
Day 1, 2: 1/4 lbs total of brown and table sugar, 1/2 maple syrup, 1/8 to 1/4 teaspoon of yeast nutrient. Oxygenate. Note that by that time you should have your WLP099 yeast starter going.
Day 2, 1: 1/4 lbs total of brown and table sugar, 1/2 maple syrup. 1/8 to 1/4 teaspoon of yeast nutrient. Oxygenate.
Day 2, 2: 1/4 lbs total of brown and table sugar, 1/2 maple syrup. 1/8 to 1/4 teaspoon of yeast nutrient. Oxygenate.
Day 3, 1: 1/4 lbs total of brown and table sugar, 1/2 maple syrup. 1/8 to 1/4 teaspoon of yeast nutrient. Oxygenate.

Notes: El lúpulo Apollo es muy bueno para brindar un amargor suave. Se puede sustituir por Magnum, Bravo, u otro lúpulo de esta categoría.
El lúpulo Perle brinda sabores y aromas clásicos, puede reemplazarse por otro lúpulo noble como Saaz, Sterling, etc.
Los lúpulos Calypso y Kohatu son moderadamente frutales, y se pueden sustituir por otros lúpulos de esas características, preferiblemente de Nueva Zelanda como Motueka, Wai-iti, Waimea, pero también se puede experimentar con otros lúpulos modernos.

LHBS didn't have WYeast 1010 so I used WLP320 American Hefeweizen Ale Yeast
Dry hopped 5 days in for 3 days with 20 gram of Mandarina Bavaria
Then added 0.25 pound more honey with 2 tablespoon DME and boiled water
Total fermentation time was 3 weeks

Used Briess 2-row and pilsner malt; Gambrinus Honey Malt.
Brewed using a BIAB system with a 10gal kettle. Used RO water with salts (see water notes). Squeezed the bag hard, pre-boil efficiency of 72%.
Oxygenated for 60 seconds with pure O2 using diffusion stone.
Prepared a 800ml 1.040 starter using DME and Wyeast 2565 about 6 hours before pitching. Pitched in 62F wort. Fermented at 62F for a couple weeks, ramped slowly to 75F over the next week or so. Cold crashed to 32F, added gelatin. Kegged a couple days later.
Tasty, easy-drinking beer. Definite crowd-pleaser. This beer aged well over the 30 days it took to kick the keg. The original recipe calls for WLP029 yeast, which I didn't have available at the time.

Notes: This is a really great beer and the best I think I have made so far. The combination of malts add some complexity, body and flavour despite mashing at a fairly low temperature. There is loads of flavour/aroma from the hops. The yeast is also present providing some subtle fruity notes. Overall a very well balanced ale that I will definitely make again.
