“This recipe may seem overly simple, but that is for a reason. The true purpose of the intentionally basic grain bill and hop schedule is to highlight a truly unique yeast strain. Omega Yeast has released a single strain of Norwegian Kveik, and the results from this strain are truly impressive. Originally isolated from Omega’s Hornindal Kveik yeast blend, Lutra™ is a rapidly fermenting yeast strain with an incredible neutral flavor expression within a wildly remarkable temperature range. Fermented at traditional ale temperatures around 68F, Lutra™ produces nearly lager-like beers with an exceptionally clean and crisp finish with minimal ester production. On the other end of the temperature spectrum in the low 90F range, Lutra™ remains quite clean yet expresses a gentle ester profile that brings to mind the flavors of a traditional Kolsch strain. After boil whirlpool the wort for 10 minutes and then cool to 68 and pitch the yeast. Ferment at 69 for a week or so. Then turn up temp to 72 and continue another 4 days or so until completely fermented out.
Cold crash the beer for several days to clear and keg at 2.5 volumes. |

SG: 1.060
OG: 1.076 (Going for 1.080)
FG: 1.014 (Going for 1.016)
Mashed lower than hoped -- 149degrees. Water in cooler was at 170 before adding grain. Kettle water was 175. Need to bump kettle water up to 182 to get where I want to be. I had to add a 1 quart boiling water infusion to get me close to where I was looking for at 60 minutes. Drained 4ish gallons each time. Hit great efficiency at 80%.
Musilin bag for the hops at 5 minutes and flameout.
Whirlpooled between 175-181 for 30 minutes. Burner was put on low after getting temp down too far. Rose over 20 minutes to 181.

I didn't have enough headroom in my 6.5gal carboy with 6 gallons of liquid. After 8 hours of fermentation, wort had 1 inch of Krausen. After 24 hours temp was at 68deg and blowing krausen through tube. Cleaned and brought temperature down. After 5 days, returned home after being away, krausen pushed open the lid (it remained on though) and filled up my blowoff jar. I need to use a bigger jar! Wort temp was 71 degrees. The Cool Brewing Bag not only contained the damage but probably kept a lot of bad stuff from entering, especially since the CO2 level in the bag was much higher. American II can handle this temp well so i'm unconcerned about fusels at this point.
Gravity after 5 days reads 1.014; recipe was looking for 1.016 but I also started 4 points lower with my OG. I'll test with a hydrometer in a few days when a rack over to secondary.
Gravity after 10 days reads 1.014 from hydrometer. 8.14% ABV, 81% attenuation.

Carboy went into the fridge for 1 hour to quickly bring the wort temp down to 62*. Transferred primary to the cool bag with a gallon ice for another 20 hours.
Purged secondary and racked onto 1oz galaxy, 1oz citra on day 11. Smells and tastes amazing -- extremely pineappley, some tangerines as well. Reminds me more of fruit juice than beer at this point.

Notes: Lost some wort druing refilling into fermentation keg. Wort left approx. 13 litres.
Left fementor on balcony @ approx 0°C for 15 hours. Wort temp :9°C
Added yeast. Bubbling for approx 1,5 days after 1 day. left fermenting for only 5 days.
Dry hopping @ 1st and last Day with ca 2 x 10 grams ofAmarillo and Mt Hood.
Before bottling, boiled around 80 grams of caramel syrup with a cup of water and 10 grams of bourbon vanilla extract.
Slight aeration during bottling.
Flavor: ok. Slight to medium diacetyl smell.
foam doesnt stay very long. Hoppy and bitter, almost no caramel/vanilla arome. But drinkable and funilly enjoyable.
