Touch of acidity but would not call sour by any means. Prior to fuit: gravity 1.060 -> 1.010, delta .050, abv 6.56, pH 4.0 Post fruit addition: purge with CO2 to 10 psi, fermentation temp 68F, gravity 1.020 to 1.008 for abv for 1.58% Total abv 8.14%. Adjust pH from 4 to 3.6 with 1.45ml lactic acid added to keg. Notes: very easy drinking but body too light and not enough residual sweetness. Not much fruit flavor. In the future shoot for higher final gravity, probably kill yeast off then add puree to preserve fruit flavor.
