Notes: After primary fermentation add 100gr defrosted raspberries per liter for a secondary fermentation.
After secondary fermentation cold crash to let the fruit drop.
Bottling options (individual bottles):
- bottle with cold brew coffee (guideline: 3% of volume)
- bottle with vodka based chili tincture (depends on tincture strength)
Cold brew coffee:
- use 500gr coarse milled beans with 2ltr water (1:4).
- Mix, steep for 24-48 hrs in fridge, strain, store refrigerated upto 2-4 weeks. |

I entered the fermentables and then back-calculated the efficiency to match the reported OG. Doing this, I arrived at 65%
The fermentation schedule goes like this:
1. Primary fermentation with 1056 at 67F for 7 days
2. Transfer to secondary and pitch lambic blend, ferment either 90 days or 1 year (the recipe contradicts itself here) between 62-78F
3. Transfer to tertiary fermentor on top of eight 14.5oz cans of Oregon tart cherries. Age three months until clear (temperature not specified).
4. Pitch champagne yeast to bottle condition (gravity should be about 1.008 at this point) |

Notes: Saaz may be used in place of Kazbek(equal ibu).
34/70, Diamond Lager, and M54 should work well as substitute yeasts.
Carafa II(preferably dehusked) can sub for Blackprinz(or Midnight Wheat in a pinch, although Debittered Black may be a better sub for midnight wheat).
I ferment it straight through at 66 degrees for 14 days, then lager for 3 weeks at 34(4-5 is better but, it is very drinkable at 3).
Beer should be black in color with a thick light tan head, medium/full body with just a hint of chocolate, possibly slight toffee in the flavor with a clean finish.

Notes: The OG came in at 1.065. I guess the Graham Crackers really kicked it up. FG came in close to the 1.012 as projected in this recipe. 6.96 ABV before other ingredients.
Reviews are very positive so far.
I will likely add more Marshmallow vodka next time. Eventually i would like to get the marshmallow flavor/scent using marshmallow of marshmallow puff. |

Notes: Las adiciones de sales se deben realizar a toda el agua que vayamos a emplear, en la receta aparecen solo al Mash, pero son a toda el agua. No se como cambiar esta opción en Brewers Friend. Las adiciones de ácidos son correctas y se realizan tal como figura en la receta. Y esto siempre que utilicemos las maltas exactas descritas en la receta y el Agua de partida Font Agudes. Si no, se deben realizar nuevos cálculos.

| Notes: Follow all brew steps, lauter to the kettle, and bring to a boil without hops to sanitize the wort. Chill back down to 110f and pitch the Goodbelly Mango Probiotic into the kettle and treat the kettle as a sanitary cellar vessel from here on forward. Bubble C02 through the wort to blanket the top of the wort and displace the oxygen. Cover the kettle with Saran or cellophane wrap. Hold wort at 110f for 24hr, tasting it until it has soured sufficiently. Target pH is 3.5 to 3.6 or to your taste. Complete the boil and hopping per schedule after souring.
