Notes: "the abyssopelagic layer or pelagic zone that contains the very deep benthic communities near the bottom of oceans. "Abyss" derives from the Greek word ἄβυσσος, meaning bottomless. At depths of 4,000 to 6,000 metres (13,123 to 19,685 feet), this zone remains in perpetual darkness and never receives daylight. It is the deeper part of the midnight zone which starts in the bathypelagic waters above.[1][2]"
Sacch rest at 152F for 60 min. Stir in the rice huls prior to washing/sparging; the rice hulls will provide additional structure for the bed that you need to get the goodness washed into the kettle. Boil. Kill the flame, add the 0 min hops, swirl cover and let sit for a 60 min hop stand. Aerate, pitch and set to 68F for 12 to 17 days. Cold crash for 2 days to 37F and then bring back to 68F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 68F. |

Start with 8 gallons of 175 degrees water.
Sparge with 165 degree water to get 6.5 gals to kettle.
Bottle with 4oz of priming sugar and age 3 months.
OG=1.090
FG= 1.024
Add 3 gals of 165 degree sparge water and stir well.
Runoff another 6 gals of wort.
Add 1oz of Norhern Brewer hops and boil for 75 mins.
Target OG= 1.040
Add 1 vial of WLP004 and ferment for 2 weeks.

Ingredients:
4 lbs German Pilsner Malt
0.5 lb Victory Malt
0.5 lb Honey Malt
6 lb Local Honey
2 oz Centennial Hops (boiled 60 mins)
2 tsp Yeast Nutrient
2 tsp Yeast Energizer
Yeast: Wyeast Scottish Ale 1728
Instructions:
Make a big yeast starter a few days before brew day.
Mash only grains at 149° F for 60 minutes. Run off and boil wort with hops for 60 minutes. Chill wort to 65 degrees F and combine with honey in fermenter. Add nutrient and energizer. Aerate well. Pitch yeast.
Ferment at 65° F for 2 to 3 weeks or until the gravity stops
Ferment for 2 to 3 weeks. It make take longer. You’ll be looking for a final gravity in the 1.028 range. Rack to a secondary vessel and condition at basement temperatures for 3 months. Prime and bottle or keg and force carbonate before serving. |

So with a little bit of scrounging Kevin secured an extra 2 ounces of Saaz hops from the Rhudes and proceed to make a Saaz hopped Milk Stout. |

Notes: This one has been very well liked by all my friends. I am working on modifying it to make it more - Milky, Chocolately and Stout-y.
Funny story about this... A buddy of mine loved this. Gave some to his father in law. HE loved it. So, my friend bought the ingredients and we brewed another batch. He gave it to his Father in Law for Christmas 2015. Father in Law decided he wanted to share some with business associates. In JAPAN. So, he carefully packed it over there. Went through an ordeal at customs and eventually got to share it with some Japanese business associates. Because of this event my brewery's slogan is:

Notes: Brewed as a "steam" lager version with S-23.
Also want to try US-05 for more peach/fruit yeast profile and may try WLP860 Helles yeast slurry.
If more of the actual Lone Star flavor profile is desired, corn may be better adjunct to get the sweetness and hops might need to be Willamette for bitter or maybe smaller additions to slightly lower IBUs. As is, this hop profile is subtle but definitely present and the Saphir adds a little light fruit/citrus and the Hallertau Blanc adds a little dry white wine to the finish.
Have used Blackland Pale Moon 2-row for this recipe and it's extremely malty in flavor. Much richer flavor than American beers and more like European commercial lagers.
In a glass out of the keg or poured from the bottle it's pretty great. Drunk straight from the bottle, it loses its malt character. |

Tasting Notes:
This beer is dark but does not taste dark. It is very smooth. While sparging I could smell the sweet corn smell of the wort. It is an extremely easy beer to drink a few of. Smooth without much hop taste in the way, very malt forward without being to bold. I could drink this beer again and again without question.
