A low mash temperature is recommended to create a light, dry easy drinking beer. Mash temperature of 147° - 149°F.
Fermentation Schedule:
Primary fermentation of two weeks at 66° - 74°F, and
a secondary fermentation for 1 to 2 weeks. You can add the tart cherry concentrate to the primary after fermentation is complete, or add to the secondary. You may notice some renewed fermentation. Wait one to two weeks and make sure fermentation is complete before bottling or kegging.
BREWER’S NOTES:
This is a pretty straightforward American wheat beer recipe. The base is part 2-row barley and American white wheat, with just a
little bit of aromatic malt for character, and a single hop addition for bittering.
This is a great beer to enjoy in the late summer and fall!

Notes:
Added one 5 ml HopShot of hop extract for bittering. Not much of a hot break.
Chilled to 18C, pumped in 45 seconds of pure oxygen, pitched 1 packet of (rehydrated 105 F water) S-04, and left at 17 C ambient to ferment.
6/15/12 Boosted temp to 18 C to ensure it finishes out. Looks a bit paler than expected.
6/23/12 Added 55g of crushed coffee beans (I used some strong Thailand import stuff) in a sanitized hop sock, not weighted. Racked to a flushed keg 22 hours later.

| Notes: pitched dreggs of Jester King's ol' oi, petite prince and RU 55 along with a vile of white labs London ale yeast. Primary fermentation for 4 weeks, secondary for 4 weeks. Rerack onto 1 oz french oak chips let sit for at least two months. Longer if more sourness is desired. lower below 20 IBU for even more sourness. |
