Mashed grains in at 158°F for one hour. Sparge with 178°F water, initial runnings at 16 Brix (1.065). Collected 7 gal at which time wort was at 3 Brix (1.012). Topped off with 5 gal water bringing initial 12 gal sparge runnings to 7 Brix (1.028) Brought to boil, pitched hop charge and boiled 60 min. Collected 10 gal @ OG 8 Brix (1.032). Pitched with Safale 04 (5th generation). Ferment @ 65°F Kegged on 10/10/2022 @ 1.010
