Oxygenate next morning and pitch yeast
Ferment at 85F for 5 days
Stripping run:
Rack/spigot wash off trub
Heat on high setting to 218F
1.6 kW setting
1.25 gal stripping run to 20%
Second run:
1.25 gal stripping distillate
0.5 gal low wines (leftover in M&B from stripping run)
0.25 gal water (20% of distillate vol)
Heating on 1kW setting set to 218F
Discarded 250 mL foreshots straight from tubing (no parrot)
3x 200-250 mL heads (via parrot)
Big heart to 40% (~0.75 gal, removed at 36%)
Tails in 500mL jars to 25% (only 300 mL remaining down to 20%)

Notes: -Extra pale malt - for a bit of color but mainly for lower ABV
-Yeast: Escarpment Labs - Jötunn - Has a dry finish a wide range of fermentation temps. Primary yeast drops out fast.
-Vanilla extract for a bit of flavor and aroma
-Orange zest for flavor and bitterness
-Honey malt in order to give a little aroma of honey and bread.
-Yakima Chief hops 2 oz - de-bittered leaves for smother feel, floral and citrusy notes as well. It will mostly be boiled off.
-3 oz of liberty 4aa full leaf - its mildew resistant and gives off a floral and slightly spicy flavor.
