beer came out great, belma hops are delicious. the FG was down to 1005 making the abv on the high side and the body kind of thin and even the color is pretty light. next time for pale ale, should add some crystal malt to give a little more depth in color and body. also consider mashing higher or not as long and maybe do mashout. i think current mash is creating sugars that are a little too fermentable?

brew night last night. the BIAB went well, no sparge. the volume came out exactly as BF predicted, although it boiled down from 6.5 to under 5 gallons in an hour, so need to account for that next time. it was orignally 1070 OG, topped up to 5 gallons for 1060, then topped up more to about 5.5 or maybe 5.66 for 1055. (did not want to end up at 1060, too strong for this beer and would require more hops for balance, at that point making it an ipa)
decided on a whim to add a little more bittering hops to end up at the upper range of IBU. my lighter beers using tap water in general come out on the sweet side but most times that is without water adjustments.
last minute decided to switch to us05 instead of voss

starting up another pale. the last one i vaguely remember coming out bad, cant remember why though. maybe somethign to do with yeast, not sure. but the base recipe is fine...
the water adjustments are as good as its gonna get on tap water. this beer would probably be much better with RO water and more precise adjustments...
changing for belma hops this time and adjusting efficiency for GF, i think i will do a true BIAB style mash today. so adding a little more to malt bill just in case

repurposing for huell melon pale ale. with updated water profile results from ward, my water profile for this beer now looks a bit out of wack by the numbers but it worked well for the last beer so im just going to roll with it for now until i have time to figure out how to fix it.

measured 1060 OG i think i got more than 5.5 gallons. i accidentally grained into my entire volume of hot liquor. after mash i sparged a little with about 1.5 or 2 gallons of cold water. pre boil vol was like 8.5 gallons

last week measured 1013 FG for 4.8%abv. but it does not taste that light. nice body and carapils flavor, also the dry hop was faint but nice. could maybe use more dry hop but in the interest of keeping it light and cheap and not-session-ipa, i think its perfect just like this.

Just had Port City Essential Pale Ale recently which has to be the tastiest pale ale on the planet...at very least it is one of my absolute favorite beers. this time it strikes me that it has a lot of not bitter hop flavor and decent backbone while still being 5.5%.
Their website says 35ibu so im knocking down the warrior contribution from 0.75 to 0.4oz. Adding more cascade in the flameout and dry hop (1oz-->2oz)
consider going 3oz in dry hop. maybe some pilsner malt or something else to add more malt backbone. vienna? but the carapils might be fine. at least to start.
need to review water. would like to use tap and adjust but unsure rn, been having off mash pH readings and low efficiency.

Notes: Planning on pitching 10-11 oz Cali slurry from prior Cream Ale. To 1.011 after 11 days.
Estimate 5.25 gallons to bottle (turned out to be 5.18 gals bottled). 5 oz corn sugar. Assume 69ºF. 2.5 vols CO2 goal. Perfectly carbed, delicious batch best of year.
Version II April 1, 2021 same but 1/2 ounce of Idaho 7 wf 1/2 ounce cascade at 15 minutes. And dry pitched Lallemand Kveik at about 85º at noon. Fast ferment start and dry hopped after only 24 hours 1 ounce each of Galaxy, Nelson, El dorado and Azacca. Finished 1.012 after 9 days.
Estimate 4.7 gallons, temp 78ºF aim 2.45 Vols-- 4.7 oz Dextrose. (actual= 4.53 gals.)
Did a batch of this at Big Elm and sold out in 5 hours. October 2022.
11/21/22 similar batch in Santo Domingo. 3 lbs Maris Otter and the balance 2row. Boil hop 1 oz Azacca and 1 oz Cascade whirlpool. 1.055 OG
Don't Pet the Cat, very nice Azacca and Nelson hint of grapefruit with apricot? Maybe needs more mouthfeel or a few more IBUs but very nice.
E-2022 just opened a bottle from november now March 4 and not oxidized still real good. |

Notes: DIRECTIONS
Mash the grains at 160°F (71°C) for 45 minutes. Vorlauf until your runnings are clear, then run off into the kettle. We typically fire up the kettle as soon as we start running off with our stouts to get some extra caramelization. Sparge the grains and top up as necessary to obtain 6 gallons (23 l) of wort—or more, depending on your evaporation rate. Boil for 120 minutes following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 65°F (18°C). Aerate the wort and pitch the yeast. Ferment at 68°F (20°C) until fermentation is complete.
Post fermentation, add the steeped espresso, cinnamon sticks, cacao nibs, maple syrup, and vanilla beans. We do each addition individually, taste often, and pull when they’re just right. Allow a few days for all of the additions to marry and settle. It should be said that all of these additions are much easier to do in a keg than in secondary.
BREWER’S NOTES
This stout is one of our favorites. It gives the impression of drinking an iced latte. We get a lot of mouthfeel from flaked oats and a high mash. When we’re working with coffee, we like to dial down the IBUs and amp up the caramel malt to play off that bitterness. We like the main focus of the blend to be the base beer, the espresso, cacao nibs, and the cinnamon. We add the maple syrup after crashing for a bit of sweetness (it might be fun to prime bottles with, too). The maple sweetness and vanilla smooth out the edges and bring the other flavors together. |
