Notes: This batch will be split into an imperial stout and a porter-ish beer by the parti-gyle brewing method.
For the second runnings batch we will also steep .75lbs Crystal 60 to add to the boil. That beer will get 1 oz magnum at 60 and .5 oz EKG at 10 mins.
Actual hop amounts in the first runnings, imperial stout, are half of what's listed above since that was only 5 gal of this 10 gal recipe.

Notes: 2 packs of M31 used after rehydration (in 100ml water - less than suggested).
Started at 18c ferment then raise to about 24c over a week.
Temp rise was about 1c per day for the first 6 days. It was struggling to warm up after a couple of days I guess because of very cold garage. Was in my largest fridge with only a copper tun heat pad for warmth.
Added sugar as a syrup after 7.5 days in primary. Loads of estery smells from fridge at this point. |

Notes: In prep for this brew buy american oak spirals (medium) and a bottle of cheap bourbon (wild turkey or Jim beam). Soak the spirals in the bourbon for 2 months minimum. After primary fermentation of 3-4 weeks, transfer to secondary and add 1 spiral. Leave in secondary to age for up to 4 months. Taste weekly, when happy with flavor bottle next day.
Expect low efficacy due to massive grain bill.
Note: priming volumes is high due to high alcohol thus less CO2 staying in solution. |

Notes: This started as an attempt to clone North Coast Brewers' Old Rasputin but I added a little twist... 3 lbs of Africanized "Killer" Bee Honey (hence the name). It turned out excellent and even garnered an honorable mention in a local homebrew contest. It's a very dark and very malty much like Old Rasputin but the Killer Bee honey (which by itself tastes a lot like caramel) added a smoothness I have never tasted in a beer before. |

Notes: John Palmer suggests these first four specialty grain proportions as rough approximations for a stout in his book "Learn to Brew". Figured I'd give it a try.
For a full-bodied, sweeter beer, I have selected a yeast strain with moderate attenuation. [And it's cheap :)]
I usually go a bit low on the hops in my dark beers.
