| Notes: A milk stout laced with pure cacao nibs in secondary, this tenebrous concoction is rich and heady. Look for an opaque ebony pint capped with dark foam and a flavor reminiscent of straight espresso laced with chocolate liqueur and sweetened with turbinado sugar. Very full-bodied, round, and filling with bittersweet hints around the edges. |

Notes: This is an example of the phrase "time fixes everything".. You may worry that my ingredients are obscure, that is because this is my way of clearing out my inventory of ingredients every summer, I may have a few pounds of a Belgium malt, or half an ounce of a German hop.. throw it all in, make it dark (coffee malt and roasted barley are required, if you have some baking chocolate, throw that in, a solid hop bittering foundation of 2 oz of magnum is good start.
This will take a month in the fermenter, it will want to overflow. Give it time.
This will need to age 2 or 3 months in the keg.
Brew before 4 th of July if you want to drink at Halloween, if you brew in August you may miss Christmas.
Also, the higher temps in the summer are beneficial here, you may need to throw in some wine yeast if the SG gets stuck north of 1.025

Notes: I'm going to try to use the previous batches trub at the point of transferring that batch to the secondary fermentor. I have a back up if fermentation doesn't start in a few days. I used only maple sap but didn't have quite enough to do a full batch.
I used 6 lbs of DME and maple sap but my OG was 1.082, not the calculated value so I adjusted the lbs to 4.4 but not sure what happened to the sugar....Still could be strong. Could my OG reading be off?
I added 2.75 gal of boiled sap into the fermenter after the first stage of fermenting was complete (likely). OG of the sap was 1.010 for about 2.75 gal. Calculating the OG combined gets 1.049. Now it will be a mellow beer if no bacterial infection. |
