Notes: Ingredients
4 lbs. (1.8 kg) pure cane sugar - amended above
1 tablespoon (15 mL) molasses
½ tsp. yeast nutrient
8 oz. (226 mL) lemon or lime (juiced)
8 oz. (226 mL) ginger root (juiced)
Clean fermenting ale yeast (Champagne works well also)
1 lb. (0.45 kg) sugar to backsweeten (added to cold keg)
Step by step
Bring sugar, molasses and water to a boil for 15 minutes. At flame out add yeast nutrient. Once cooled to yeast pitching temperature, add the yeast and allow the temperature to rise naturally to the upper limit of the yeast’s range; you want a good and fast ferment. After 10 days or so, cool to near freezing to drop out as much yeast you can. Transfer the clear finished ginger beer into an empty Corny keg and add the ginger juice, lemon (or lime) juice, and sugar (dissolved in 2 cups/500 mL boiling water) to backsweeten. Mix all this very well or the dense sugar syrup will drop to the bottom. Follow the same carbonation advice as the hard root beer recipe. |

| Notes: Bock (German for goat) is likely a descendant of some of the oldest German lagers in the world. It evolved in the Franconia region of Germany, just north of modern day Bavaria. Bock has one of the largest ranges of the German beers and can be light (like a helles bock or maibock) to very dark; it can also be moderate to very strong in alcohol. A traditional bock is generally not hoppy, but more malt forward and brewed to at least a starting gravity of 1.064. We sat down with Larry Leinhart, owner and brewer at Prost Brewing Co. in Denver, Colorado to see how he brews his traditional bock. Prost Brewing Co. is a brewery that has made a name for itself as a lager brewery. Their brewhouse is a classic copper German two-vessel system built in 1963. This recipe was originally featured in the November/December 2011 issue of Zymurgy. |

Notes: 1. Heat water to 150 degrees and add steeping grains for 30 minutes.
2. Keep at a steady temperature.
3. Stand Liquid Malts in can in boiled water.
4. Boil Magnum for 60 mins seperately and 15 mins before end, add Galaxy allow this to happen while doing steps 5 & 6.
5. Add DME very slowly, while stirring until dissolved.
6. Add Maltodextrin very slowly, while stirring until dissolved.
7. Add liquid malts and stir in.
8. Pour into fermenter.
9. Add water to top-up to 23l.
10. Pitch yeast.
11. Add waterlock, brewing belt etc...
12. After 4 days, grind dry hops and add to muslin bag (2 my be required to allow adequate room). - add heavy weights to these - they'll be super-boyant.
13. Allow to ferment/mature for a further 5 days.
14. Secondary ferment for 2 weeks.
15. Condition for 3 days.
