Notes: Instructions:
5 gallons of cool water into brewpot
Fill grain bag with Briess malt; add to water, heat pot up to 170 F stirring every 5 mins
When water reaches 170 remove grain bag and let drain without squeezing for 1 min
As water begins to boil, remove from heat and add DME; return to heat
Add Tettnang hops after boiling 5 mins
Boil 60 mins after adding hops
Add back 1 gallon clean water
Special Instructions:
At start of boil, put dried lingonberries in the blender and cover with wort from the kettle. Puree, cool, and add the pectic enzyme. Refrigerate for one 1 day. Add this mix to the fermenter on day two of fermentation.
After 30 minutes of the boil, remove two cups of wort to a smaller pot. Heat the wort to keep it hot, but do not boil it. Add the yarrow, meadowsweet, and birch syrup. Steep this mix until the end of the boil, then strain it into to the kettle.
Add the cranberry concentrate and honey immediately after flame-out (end of boil).

Notes: begin heating 1 gallon of water in 1.5 gallon or larger pot, while heating, add sorghum syrup and candi syrup to boil pot and stir well. continue stirring occasionally to prevent scorching and bring mixture to a boil. while waiting for the mixture to boil place 2 packets of the northern brewer hops into hop sack, tie it closed and trim away the excess material. once your mixture is boiling, add the hop sack and start a timer for 30 minutes. once this mixture has been boiling for 25 minutes, open the last packet of hops and add them directly into the mixture and let it boil for 5 more minutes and then remove from heat. allow the mixture to cool for 5 minutes . add wort to fermenter containing 1 gallon of cold water. top up to the 2 gallon mark. pitch yeast. |

Notes: - Add 2.5 gal of water to the kettle, heat to 155 F
- Steep oat and wheat for 30 min
- Remove kettle from burner and add LME slowly while stiring
- Return to boil
- Add @ 60min 1 oz Saaz ; @ 30min 0.5 oz Hallertau ; @ 15 min Irish moss
- Sanitize the fermenter; add 2 gal cold water
- Chill the wort to 70-80 F as quickly as possible (chiller)
- Pour the wort through a strainer and top up the fermenter up to 5.5 gallon
- Oxigenate (O2) for 30 seconds
- take a gravity read as soon the temperature reach 68F
- pitch the yeast
- seal the fermenter |
